🍽️ Crispy Kasseler with creamy sauerkraut and golden schupfnudeln

Ingredients
- onions, yellow 2 pcs.
- sunflower oil 4 tbsp.
- sauerkraut 400 g
- dry white wine 75 ml
- vegetable broth 300 ml
- salt pinch
- pepper, black ground pinch
- sugar 2 tsp.
- bay leaves, dried 1 pcs.
- cumin, whole 1 g
- kasseler, whole piece 600 g
- butter 4 tbsp.
- schupfnudeln 600 g
Instructions
- 1. Halve the onions and remove the outer skin.
- 2. Dice the onions into small cubes.
- 3. Heat two tablespoons of oil in a pot over medium heat.
- 4. Sauté the onion cubes for about two minutes until translucent.
- 5. Add the sauerkraut to the pot and fry briefly.
- 6. Deglaze the mixture with wine and broth.
- 7. Season with salt, pepper, sugar, a bay leaf, and caraway seeds.
- 8. Let the sauerkraut simmer covered for about 30 minutes.
- 9. Stir the sauerkraut regularly and add more broth if needed.
- 10. Rinse the Kasseler and pat it dry.
- 11. Cut the Kasseler into four pieces.
- 12. Heat one tablespoon of oil in a pan over medium-high heat.
- 13. Fry the Kasseler for about three to four minutes.
- 14. Add the fried Kasseler to the sauerkraut.
- 15. Melt one tablespoon of oil and two tablespoons of butter in the same pan over medium heat.
- 16. Fry the schupfnudeln for about seven to eight minutes until golden brown.
- 17. Finally, adjust the sauerkraut seasoning with salt and pepper.
- 18. Plate the schupfnudeln, sauerkraut, and Kasseler.
- 19. Serve the dish and enjoy!
