🍽️ Kasseler with Alsatian Cream Sauerkraut, Grapes, and Mini-Dumplings

Ingredients
- Salt Pinch
- Kasseler, in one piece 600 g
- Onions, yellow 1 pc.
- Sauerkraut 500 g
- Parsley, fresh 15 g
- Grapes, light 200 g
- Oil 1 tbsp
- Heavy cream 100 g
- Sugar Pinch
- Mini potato dumplings 800 g
- Butter 2 tbsp
- Pepper, black ground Pinch
Instructions
- 1. Bring about 2 liters of salted water to a boil in a pot.
- 2. Rinse the Kasseler and dry it thoroughly.
- 3. Halve an onion, peel it, and cut it into small cubes.
- 4. Place the sauerkraut in a colander and let it drain well.
- 5. Wash the parsley, spin it dry, and pick the leaves off the stems.
- 6. Finely chop the parsley leaves.
- 7. Wash the grapes and halve them.
- 8. Heat 1 tablespoon of oil in a pot over medium heat.
- 9. Sauté the onion cubes in it for about 2 to 3 minutes until translucent.
- 10. Add the drained sauerkraut and fry it for about 1 minute.
- 11. Deglaze the mixture with cream.
- 12. Season to taste with salt and sugar.
- 13. Reduce the heat.
- 14. Place the Kasseler pieces on top of the sauerkraut.
- 15. Let everything simmer covered for about 15 minutes.
- 16. Add the dumplings to the boiling salted water.
- 17. Cook the dumplings uncovered for about 12 minutes.
- 18. Remove the cooked dumplings with a slotted spoon.
- 19. Let the dumplings drain briefly.
- 20. Place the dumplings on a large plate.
- 21. Pour off the cooking water.
- 22. Melt butter in the same pot over medium heat.
- 23. Fry the dumplings in it for about 1 to 2 minutes until golden brown, shaking the pot occasionally.
- 24. Mix the chopped parsley and halved grapes into the sauerkraut.
- 25. Season the sauerkraut with salt, pepper, and sugar.
- 26. Plate the Kasseler together with the cream sauerkraut and dumplings.
- 27. Serve the dish and enjoy your meal.
