🍽️ Kasseler with Apple Crust, Creamy Sauerkraut and Dumplings

Ingredients
- apples, red 1 pc.
- chives, fresh 10 g
- oil 3 tbsp
- sugar 1 tsp
- sauerkraut 500 g
- whipping cream 200 g
- salt pinch
- mini potato dumplings 400 g
- mini bread dumplings 400 g
- butter 3 tbsp
- breadcrumbs 100 g
- pepper, black ground pinch
- Kasseler pork, whole piece 600 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the apple thoroughly.
- 3. Cut the apple into four quarters.
- 4. Remove the core from the apple quarters.
- 5. Cut two of the quarters into coarse cubes.
- 6. Grate the remaining two quarters coarsely.
- 7. Rinse the chives under running water.
- 8. Shake the chives dry.
- 9. Cut the chives into thin rings.
- 10. Heat one tablespoon of oil in a pot over medium heat.
- 11. Fry the apple cubes together with sugar for about three minutes until golden brown.
- 12. Add the sauerkraut to the pot.
- 13. Pour in the cream.
- 14. Let the mixture simmer over medium heat for about 15 minutes.
- 15. Bring about two liters of salted water to a boil in a pot.
- 16. Cover the pot with a lid.
- 17. Add the dumplings to the bubbling salted water.
- 18. Let the dumplings cook without the lid for about 10 minutes.
- 19. Ensure that the water does not boil again during the cooking process.
- 20. Mix two tablespoons of soft butter with breadcrumbs and the grated apples in a bowl.
- 21. Season the butter mixture with salt and pepper.
- 22. Set the prepared mixture aside.
- 23. Rinse the Kasseler (cured pork loin) under running water.
- 24. Pat the Kasseler dry with a kitchen towel.
- 25. Cut the Kasseler into slices about two centimeters thick.
- 26. Heat one tablespoon of oil in a frying pan over medium heat.
- 27. Fry the Kasseler steaks on all sides for about two minutes.
- 28. Place the fried steaks on a baking sheet.
- 29. Season the steaks with salt and pepper.
- 30. Spread the butter-apple mixture evenly over the steaks.
- 31. Bake the steaks in the oven on the top rack for approx. 5 minutes.
- 32. Leave the pan uncleaned.
- 33. Remove the finished dumplings from the water with a slotted spoon.
- 34. Let the dumplings drain briefly in a sieve.
- 35. Heat one tablespoon of butter and one tablespoon of oil in the pan drippings over medium heat.
- 36. Fry the dumplings until golden brown for about three minutes, turning occasionally.
- 37. Finally, adjust the creamy sauerkraut to taste with salt, pepper, and sugar.
- 38. Take the Kasseler steaks with the apple crust out of the oven.
- 39. Serve the steaks together with the creamy sauerkraut and dumplings on plates.
- 40. Garnish the dish with the prepared chive rings.
