Instructions

  1. 1. Wash the beans thoroughly, trim the ends, and cut them in half. Bring about 2 liters of salted water to a boil in a large pot and cook the beans for about 10 minutes until al dente.
  2. 2. While the beans are cooking, rinse the Kasseler, pat it dry with paper towels, and cut it into coarse cubes. Halve the onion, peel it, and dice it finely. Wash the parsley, shake it dry, pluck the leaves from the stems, and chop them finely.
  3. 3. Remove the beans with a slotted spoon and let them drain in a colander. Add about 1 liter of hot water to the cooking water and heat the dumplings in it over medium heat for about 10 minutes.
  4. 4. Heat 1 tablespoon of oil and 1 tablespoon of butter in a pan over medium heat. Sauté the onion cubes for about 2 minutes until translucent, then add the beans and Kasseler cubes. Season with salt and pepper, stir in the parsley, cover, and cook for about 6 minutes.
  5. 5. Plate the Kasseler-bean mixture, remove the vegetable dumplings from the water, and place them alongside. Sprinkle fried onions over the dumplings and serve. Enjoy your meal!
