🍽️ Potato Wedges with Mini Meatballs

Ingredients
- potatoes, mainly waxy 1 kg
- olive oil 2 tbsp
- salt pinch
- pepper, black ground pinch
- onions, yellow 1 pc
- minced meat, mixed 200 g
- eggs 1 pc
- breadcrumbs 2 tbsp
- paprika, sweet 1 tsp
- feta 200 g
- parsley, fresh 20 g
- organic limes 1 pc
- sour cream yogurt, Greek style 150 g
- sugar pinch
Instructions
- 1. Preheat the oven to 200 °C (fan). Wash the potatoes thoroughly and cut them into wedges. Toss them on a baking tray with olive oil, salt, and pepper, and bake for about 25 minutes until golden brown.
- 2. Halve the onion, peel it, and dice it finely. In a bowl, combine the ground meat with the onion, egg, and breadcrumbs. Season with salt, pepper, and paprika, and shape small meatballs. After half the baking time, add them to the potatoes and finish cooking together.
- 3. Crumble the feta cheese with your hands. Wash the parsley, shake it dry, pluck the leaves from the stems, and chop them finely. Halve the lime and squeeze out the juice.
- 4. In a bowl, combine the feta with yogurt. Stir in the parsley and season with lime juice, salt, pepper, and sugar.
- 5. Remove the potato wedges and mini meatballs from the oven and serve with the feta dip. Enjoy your meal!
