  1. 1. Preheat the oven to 200 °C (convection). Wash the potatoes thoroughly and insert a skewer lengthwise into each. Using a sharp knife, cut the potatoes all around at intervals of approx. 0.5 cm up to the skewer, turning the potatoes to form spirals.
  2. 2. Peel the garlic and chop it roughly. Mix it in a bowl with oil, salt, and pepper. Gently separate the potato spirals on the skewers and brush them all around with the seasoned oil, ensuring it also reaches into the gaps.
  3. 3. Place the potatoes on a baking sheet lined with baking paper and bake them golden brown for 50–60 minutes depending on size, turning them several times and brushing them with the remaining oil.
  4. 4. Wash the spring onions, shake them dry, cut off the root ends, and slice them into rings. Drain the tomatoes and chop them finely. In a bowl, mix the sour cream with spring onions and tomatoes. Season the mixture with salt and pepper to taste.
  5. 5. Take the potato twisters out of the oven and serve them with the tomato dip. Enjoy your meal!
