🍽️ Sweet Potato Patties with Mozzarella and Bean Salad

Ingredients
- Salt pinch
- Sweet potatoes 800 g
- Oil 4 tbsp
- Pepper, black ground pinch
- Green beans 600 g
- Pepper, red 2 pcs
- Spring onions 1 bunch
- Pumpkin seeds 25 g
- Olive oil 2 tbsp
- Balsamic vinegar, dark 1 tbsp
- Sugar pinch
- Mozzarella 2 pcs
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Fill a pot with 3 liters of water and add salt.
- 3. Bring the water to a boil.
- 4. Wash the sweet potato thoroughly.
- 5. Peel the sweet potato.
- 6. Cut the sweet potato into slices about 1 centimeter thick.
- 7. Place the sweet potato slices in a bowl.
- 8. Add 2 tablespoons of oil.
- 9. Season with salt and pepper.
- 10. Mix everything well so that the slices are coated.
- 11. Line a baking tray with baking paper.
- 12. Spread the sweet potato slices out flat on the tray.
- 13. Place the tray in the oven for 20 to 25 minutes.
- 14. Remove the tray after the time has passed.
- 15. Empty the sweet potatoes onto the tray.
- 16. Wash the beans.
- 17. Cut off the ends of the beans.
- 18. Put the beans into the boiling salted water.
- 19. Cook the beans for about 10 minutes until they are tender but still firm.
- 20. Drain the beans in a colander.
- 21. Let the beans cool down in the colander.
- 22. Wash the bell pepper.
- 23. Wash the spring onions.
- 24. Remove the stems and seeds from the bell pepper.
- 25. Cut the bell pepper into strips about 0.5 centimeters wide.
- 26. Cut off the root ends of the spring onions.
- 27. Slice the spring onions diagonally into rings about 0.5 centimeters thick.
- 28. Add 2 tablespoons of oil to a frying pan.
- 29. Heat the oil over medium heat.
- 30. Fry the bell pepper strips for about 3 minutes.
- 31. Add the spring onion rings.
- 32. Fry everything for another 2 minutes.
- 33. Remove the pan from the heat.
- 34. Take the bowl you used for the sweet potatoes and clean it.
- 35. Put the cooked beans into the clean bowl.
- 36. Add the fried bell pepper.
- 37. Add the fried spring onions.
- 38. Add pumpkin seeds.
- 39. Add olive oil.
- 40. Add balsamic vinegar.
- 41. Season the salad with salt.
- 42. Season the salad with pepper.
- 43. Season the salad with sugar.
- 44. Mix the salad well.
- 45. Take the roasted sweet potatoes out of the oven.
- 46. Arrange the sweet potatoes on plates.
- 47. Tear the mozzarella into rough pieces.
- 48. Distribute the mozzarella over the sweet potatoes.
- 49. Serve the bean salad alongside.
