🍽️ Crispy Potato and Ham Strudel

Ingredients
- butter 80 g
- wheat flour, Type 405 200 g
- salt pinch
- eggs 1 pc.
- potatoes, mostly waxy 400 g
- onions, yellow 2 pc.
- honey 4 tsp
- balsamic vinegar, light 1 tbsp
- pepper, black ground pinch
- Emmentaler grated 150 g
- sour cream 100 g
- ham cubes 125 g
Instructions
- 1. Put 3 tablespoons of soft butter, flour, salt, one egg, and 2 to 3 tablespoons of water into a bowl.
- 2. Knead the ingredients into a smooth, pliable dough.
- 3. Shape the dough into a ball.
- 4. Lightly brush the dough ball with a little oil.
- 5. Let the dough rest for about 30 minutes.
- 6. Wash the potatoes thoroughly under running water.
- 7. Place the potatoes in a pot of salted water.
- 8. Cook the potatoes for about 25 minutes until tender.
- 9. Drain the water.
- 10. Peel the warm potatoes.
- 11. Cut the potatoes into rough cubes.
- 12. Halve the onions and peel them.
- 13. Roughly chop the onions.
- 14. Heat 3 tablespoons of butter in a pan over medium heat.
- 15. Sauté the onions for 5 to 6 minutes until soft.
- 16. Season the onions with honey, vinegar, salt, and pepper.
- 17. Put Emmental cheese, the potato cubes, and the onions into a bowl.
- 18. Mix the ingredients with sour cream.
- 19. Finally, season the filling well to taste.
- 20. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 21. Sprinkle some flour on a kitchen towel.
- 22. Roll the dough thinly into a rectangle of approx. 30 x 45 cm.
- 23. Top the dough surface with cubes of ham.
- 24. Spread the potato-onion mixture over the ham.
- 25. Leave a border of 2 cm free around the edges.
- 26. Fold the free edges inward.
- 27. Roll the strudel up from the long side.
- 28. Place the strudel seam-side down on a baking sheet lined with parchment paper.
- 29. Bake the strudel for about 40 minutes in the oven.
- 30. Brush the strudel several times with the remaining butter while baking.
- 31. Carefully remove the finished strudel from the oven.
- 32. Slice the strudel.
