  1. 1. Put 3 tablespoons of soft butter, flour, salt, one egg, and 2 to 3 tablespoons of water into a bowl.
  2. 2. Knead the ingredients into a smooth, pliable dough.
  3. 3. Shape the dough into a ball.
  4. 4. Lightly brush the dough ball with a little oil.
  5. 5. Let the dough rest for about 30 minutes.
  6. 6. Wash the potatoes thoroughly under running water.
  7. 7. Place the potatoes in a pot of salted water.
  8. 8. Cook the potatoes for about 25 minutes until tender.
  9. 9. Drain the water.
  10. 10. Peel the warm potatoes.
  11. 11. Cut the potatoes into rough cubes.
  12. 12. Halve the onions and peel them.
  13. 13. Roughly chop the onions.
  14. 14. Heat 3 tablespoons of butter in a pan over medium heat.
  15. 15. Sauté the onions for 5 to 6 minutes until soft.
  16. 16. Season the onions with honey, vinegar, salt, and pepper.
  17. 17. Put Emmental cheese, the potato cubes, and the onions into a bowl.
  18. 18. Mix the ingredients with sour cream.
  19. 19. Finally, season the filling well to taste.
  20. 20. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  21. 21. Sprinkle some flour on a kitchen towel.
  22. 22. Roll the dough thinly into a rectangle of approx. 30 x 45 cm.
  23. 23. Top the dough surface with cubes of ham.
  24. 24. Spread the potato-onion mixture over the ham.
  25. 25. Leave a border of 2 cm free around the edges.
  26. 26. Fold the free edges inward.
  27. 27. Roll the strudel up from the long side.
  28. 28. Place the strudel seam-side down on a baking sheet lined with parchment paper.
  29. 29. Bake the strudel for about 40 minutes in the oven.
  30. 30. Brush the strudel several times with the remaining butter while baking.
  31. 31. Carefully remove the finished strudel from the oven.
