🍽️ Classic Potato Salad with Viennese Sausages

Ingredients
- potatoes, mainly waxy 1 kg
- onions, yellow 1 pc.
- apples, red 1 pc.
- pickles 6 pcs.
- parsley, fresh 20 g
- vegetable broth 200 ml
- mayonnaise 6 tbsp
- salt pinch
- pepper, black ground pinch
- Vienna sausages 8 pcs.
Instructions
- 1. Fill a pot with water and bring it to a boil.
- 2. Add the potatoes to the boiling water.
- 3. Cook the potatoes for 20 to 25 minutes until they are soft.
- 4. Cut the onion in half and remove the skin.
- 5. Dice the onion finely.
- 6. Wash the apple thoroughly.
- 7. Cut the apple into quarters and remove the core.
- 8. Dice the apple finely as well.
- 9. Let the cucumbers drain well.
- 10. Cut the cucumbers into small pieces.
- 11. Rinse the parsley under running water.
- 12. Shake the parsley dry.
- 13. Pick the parsley leaves off the stems.
- 14. Finely chop the parsley leaves.
- 15. Drain the cooked potatoes.
- 16. Let the potatoes steam for a short moment.
- 17. Peel the cooled potatoes.
- 18. Slice the potatoes into thin rounds.
- 19. Prepare the broth according to the package instructions if necessary.
- 20. Heat the broth in a pot.
- 21. Place the potato slices in a large bowl.
- 22. Add the diced onion to the bowl.
- 23. Add the diced apple to the bowl.
- 24. Add the cucumber pieces to the bowl.
- 25. Pour the warm broth over the vegetables.
- 26. Add the mayonnaise to the bowl.
- 27. Add 2 tablespoons of cucumber water to the bowl.
- 28. Season the mixture with salt.
- 29. Season the mixture with pepper.
- 30. Mix all ingredients thoroughly.
- 31. Set the potato salad aside to let the flavors meld.
- 32. Bring a pot of water to a boil.
- 33. Remove the pot from the heat.
- 34. Place the Viennese sausages into the hot water.
- 35. Cover the pot.
- 36. Let the sausages sit in the water for about 5 minutes.
- 37. Taste the potato salad one last time.
- 38. Sprinkle the chopped parsley over the salad.
- 39. Plate the potato salad.
- 40. Serve the sausages together with the salad.
