🍽️ Potato Salad with Salsa Dressing

Ingredients
- potatoes, mainly waxy 500 g
- salt pinch
- vine tomatoes 200 g
- pepper, red 1 pc.
- spring onions 1 bunch
- basil, fresh 25 g
- olive oil 2 tbsp
- balsamic vinegar, light 1 tbsp
- pepper, black ground pinch
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Cook the potatoes for about 20 minutes.
- 4. Pour hot water over the tomatoes.
- 5. Peel the skin off the tomatoes.
- 6. Halve the tomatoes.
- 7. Remove the seeds from the tomatoes.
- 8. Finely dice the flesh of the tomatoes.
- 9. Wash the bell peppers.
- 10. Remove the stem and seeds of the bell pepper.
- 11. Finely dice the bell pepper.
- 12. Clean the spring onions.
- 13. Dry the spring onions.
- 14. Cut the spring onions into thin rings.
- 15. Wash the basil.
- 16. Dry the basil.
- 17. Pluck the leaves from the basil stems.
- 18. Slice the basil leaves into thin strips.
- 19. Drain the cooked potatoes.
- 20. Let the potatoes steam off briefly.
- 21. Peel the potatoes.
- 22. Dice the potatoes.
- 23. Mix oil, vinegar, salt, and pepper in a bowl.
- 24. Fold in the potatoes, tomatoes, and bell peppers into the dressing mixture.
- 25. Fill the salad into jars.
- 26. Garnish the salad with the basil strips.
- 27. Enjoy!
