  1. 1. Wash the potatoes thoroughly and bring them to a boil in a pot with salted water. Cook with the lid on for about 20 minutes until they are soft.
  2. 2. Cut the onions in half, peel them, and dice them finely. Wash the parsley, dry it well, and remove the thick stems. In a tall container, puree the parsley with oil, vinegar, and mustard. Season with salt and pepper.
  3. 3. In another pot, bring the vegetable broth to a boil and cook the onions in it for about 3 minutes.
  4. 4. Drain the potatoes, peel them, and slice them thinly while still warm. In a bowl, pour the warm broth over the potato slices, mix well, and let it sit for at least 20 minutes.
  5. 5. Add the parsley dressing, mix well, and adjust the seasoning of the potato salad. Enjoy your meal! Tip: Prepare the potato salad in advance and let it sit for at least one hour so it tastes even better.
