🍽️ Potato Salad with Parsley Dressing

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- parsley, fresh 40 g
- rapeseed oil 3 tbsp
- vinegar 2 tbsp
- mustard 1 tsp
- pepper, black ground pinch
- vegetable broth 300 ml
Instructions
- 1. Wash the potatoes thoroughly and bring them to a boil in a pot with salted water. Cook with the lid on for about 20 minutes until they are soft.
- 2. Cut the onions in half, peel them, and dice them finely. Wash the parsley, dry it well, and remove the thick stems. In a tall container, puree the parsley with oil, vinegar, and mustard. Season with salt and pepper.
- 3. In another pot, bring the vegetable broth to a boil and cook the onions in it for about 3 minutes.
- 4. Drain the potatoes, peel them, and slice them thinly while still warm. In a bowl, pour the warm broth over the potato slices, mix well, and let it sit for at least 20 minutes.
- 5. Add the parsley dressing, mix well, and adjust the seasoning of the potato salad. Enjoy your meal! Tip: Prepare the potato salad in advance and let it sit for at least one hour so it tastes even better.
