  1. 1. Cut the onion in half through the middle, peel and dice finely. Peel the potatoes, wash thoroughly and grate finely. In a bowl, mix the onion and potatoes with one egg and flour, then season with salt and pepper.
  2. 2. Heat some oil in a pan over medium heat and distribute half of the mixture to form 4 rösti of about 10 cm diameter, press down lightly and fry golden brown for about 2 minutes on each side. Drain on kitchen paper and repeat with the remaining mixture.
  3. 3. Wipe the pan briefly, then heat again over medium heat and crack the eggs into it. Fry these for about 4 minutes to make fried eggs and season with salt and pepper.
  4. 4. Arrange the potato rösti on plates, top with ham and place one fried egg on each. Enjoy your meal!
