🍳 Potato Rösti with Cooked Ham and Fried Egg

Ingredients
- onions, yellow 1 pc.
- potatoes, mostly waxy 500 g
- eggs 9 pcs.
- wheat flour, Type 405 1 tbsp
- salt pinch
- pepper, black ground 1 tbsp
- oil 6 tbsp
- boiled ham 8 slices
Instructions
- 1. Cut the onion in half through the middle, peel and dice finely. Peel the potatoes, wash thoroughly and grate finely. In a bowl, mix the onion and potatoes with one egg and flour, then season with salt and pepper.
- 2. Heat some oil in a pan over medium heat and distribute half of the mixture to form 4 rösti of about 10 cm diameter, press down lightly and fry golden brown for about 2 minutes on each side. Drain on kitchen paper and repeat with the remaining mixture.
- 3. Wipe the pan briefly, then heat again over medium heat and crack the eggs into it. Fry these for about 4 minutes to make fried eggs and season with salt and pepper.
- 4. Arrange the potato rösti on plates, top with ham and place one fried egg on each. Enjoy your meal!
