🍳 Crispy Potato Pancakes with Homemade Applesauce

Ingredients
- apples, green 1 kg
- sugar 80 g
- apple juice 75 ml
- cinnamon pinch
- potatoes, mostly waxy 1 kg
- onions, yellow 1 pc.
- eggs 2 pcs.
- cornstarch 1 tbsp
- salt pinch
- pepper, black ground pinch
- oil 4 tbsp
Instructions
- 1. Peel the apples and remove the core.
- 2. Cut the apple flesh into small cubes.
- 3. Put the sugar in a pot and heat it over medium temperature.
- 4. Let the sugar melt for about 3 minutes until it turns golden brown and caramelized.
- 5. Deglaze the caramel with apple juice.
- 6. Stir the mixture for about 1 to 2 minutes until the caramel has completely dissolved.
- 7. Add the apple pieces and cinnamon to the pot.
- 8. Let the apples cook for about 10 minutes until soft.
- 9. Mash the cooked apples with a potato masher to your desired coarseness or fineness.
- 10. Season the applesauce to taste.
- 11. Let the applesauce cool down briefly.
- 12. Wash the potatoes thoroughly and peel them.
- 13. Grate the potatoes coarsely using a grater.
- 14. Peel the onion and dice it finely.
- 15. Put the grated potatoes and onion cubes into a bowl.
- 16. Add the egg, starch, salt, and pepper.
- 17. Mix all ingredients in the bowl thoroughly.
- 18. Heat 2 tablespoons of oil in a non-stick pan over medium heat.
- 19. Spoon the potato mixture into the hot pan in portions.
- 20. Flatten the portions with the back of the spoon.
- 21. Fry the pancakes for about 2 to 3 minutes per side until golden brown.
- 22. Repeat the process until all the potato mixture has been used.
- 23. Drain the finished pancakes on kitchen paper to absorb excess oil.
- 24. Keep the pancakes warm in the oven at about 50 degrees Celsius if desired.
- 25. Serve the warm potato pancakes with the applesauce.
