🍽️ Creamy Mashed Potatoes with Crispy Bacon and Oven Onions

Ingredients
- butter 60 g
- Thyme, fresh 30 g
- Onions, yellow 4 pcs
- Salt Pinch
- Pepper, black ground Pinch
- feta 100 g
- Potatoes, mostly waxy 1 kg
- Bacon strips 125 g
- Milk 50 ml
- Whipping cream 75 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Melt the butter in a small pot over low heat.
- 3. Wash the thyme and shake it dry.
- 4. Pluck the thyme leaves from the stems and add them to the melted butter.
- 5. Set the thyme butter aside to let the flavors infuse.
- 6. Peel the onions and cut off about 2 centimeters from the bottom end.
- 7. Save the cut-off onion pieces.
- 8. Place the whole onions in a greased baking dish.
- 9. Season the onions with salt and pepper.
- 10. Spread some thyme butter over the onions.
- 11. Place the baking dish in the preheated oven.
- 12. Bake the onions for about 60 minutes until they are soft.
- 13. Crumble the feta over the onions after 40 minutes of baking time.
- 14. Bring about 3 liters of salted water to a boil in a large pot.
- 15. Peel the potatoes and wash them.
- 16. Cut the potatoes into cubes.
- 17. Boil the potato cubes in the salted water for 20 to 25 minutes until tender.
- 18. Dice the saved onion pieces finely.
- 19. Heat the remaining thyme butter in a pan over medium heat.
- 20. Sauté the onion cubes for about 3 minutes until soft.
- 21. Add the bacon and fry it for approx. 4 minutes.
- 22. Drain the cooked potatoes.
- 23. Let the potatoes steam dry for a moment in the hot pot.
- 24. Mash the potatoes roughly with milk and cream to make a puree.
- 25. Stir the bacon and onion mixture into the mashed potatoes.
- 26. Season the puree to taste.
- 27. Plate the mashed potatoes with the baked onions.
