🍽️ Crispy Potato & Brussels Sprout Pizza with Honey Roasted Walnuts

Ingredients
- potatoes, mainly firm 400 g
- Brussels sprouts, fresh 300 g
- salt pinch
- olive oil 2 tbsp
- honey 2 tbsp
- pepper, black ground pinch
- pizza dough with tomato sauce 2 pcs.
- crème fraîche 300 g
- Parmesan, grated 6 tbsp
- walnut kernels 4 tbsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan setting.
- 2. Wash the potatoes thoroughly.
- 3. Slice the potatoes into very thin rounds of about 0.2 centimeters thickness.
- 4. Wash the Brussels sprouts.
- 5. Trim off the hard stem at the bottom thinly.
- 6. Remove any wilted or unattractive outer leaves.
- 7. Halve or third the Brussels sprouts depending on their size.
- 8. Fill a pot with salted water and bring it to a boil.
- 9. Add the potato slices and Brussels sprouts to the boiling water.
- 10. Cook the vegetables covered with a lid for about 4 minutes.
- 11. Drain the vegetables in a colander.
- 12. Rinse the vegetables briefly with cold water to stop the cooking process.
- 13. Let the vegetables drain well.
- 14. Place the vegetables in a large bowl.
- 15. Add 2 tablespoons of olive oil.
- 16. Add 1 tablespoon of honey.
- 17. Season with salt and pepper to taste.
- 18. Mix everything well so that the vegetables are evenly coated.
- 19. Take the pizza doughs out of the packaging.
- 20. Carefully remove the baking paper.
- 21. Place the doughs onto the baking sheets.
- 22. Spread the doughs evenly with crème fraîche.
- 23. Season the crème fraîche generously with salt and pepper.
- 24. Save the tomato sauce for another use.
- 25. Distribute the seasoned potatoes and Brussels sprouts evenly over the pizzas.
- 26. Sprinkle grated Parmesan cheese over the top.
- 27. Place the baking sheets on the lowest or middle rack.
- 28. Bake the pizzas for about 15 minutes until golden brown.
- 29. Swap the baking sheets' positions after about 8 minutes.
- 30. Heat a frying pan over medium heat.
- 31. Roast the walnuts in the pan for about 2 minutes.
- 32. Drizzle 1 tablespoon of honey over the nuts.
- 33. Continue to caramelize the nuts for about 1 minute.
- 34. Remove the walnuts from the pan.
- 35. Let them cool on a plate.
- 36. Chop the cooled walnuts coarsely.
- 37. Take the finished potato pizzas out of the oven.
- 38. Cut the pizzas into pieces.
- 39. Sprinkle the caramelized walnuts over the top.
- 40. Serve the pizza immediately.
