🍽️ Potato Goulash with Sausages

Ingredients
- onions, yellow 2 pcs.
- pepper, red 1 pcs.
- potatoes, mostly waxy 1 kg
- oil 2 tbsp.
- tomato paste 1 tbsp.
- vegetable broth 500 ml
- salt pinch
- pepper, black ground pinch
- bay leaves, dried 1 pcs.
- paprika, sweet 1 tsp.
- Vienna sausages 4 pcs.
- parsley, fresh 20 g
- crème fraîche 4 tbsp.
Instructions
- 1. Halve the onions and peel them. Dice the onions into small cubes.
- 2. Wash the bell peppers thoroughly. Remove the stem and seeds. Dice the bell peppers as well.
- 3. Peel the potatoes and rinse them. Cut the potatoes into cubes.
- 4. Heat oil in a pot over medium heat.
- 5. Sauté the bell peppers together with the onions for about 1 to 2 minutes until translucent. (Translucent means the vegetables become soft and slightly see-through).
- 6. Add the tomato paste and the potato cubes. Sauté everything for another 2 minutes.
- 7. Deglaze the mixture with broth.
- 8. Season with salt, pepper, a bay leaf, and paprika powder.
- 9. Bring the mixture to a boil.
- 10. Place the lid on the pot and let the goulash simmer for about 20 to 25 minutes.
- 11. Slice the Vienna sausages in the meantime.
- 12. Wash the parsley and pat it dry.
- 13. Pluck the parsley leaves from the stems and chop them finely.
- 14. Add the sausage slices to the goulash and warm them for about 5 minutes.
- 15. Serve the goulash with a dollop of crème fraîche.
- 16. Sprinkle the dish with the chopped parsley. Enjoy your meal!
