  1. 1. Halve the onions and peel them. Dice the onions into small cubes.
  2. 2. Wash the bell peppers thoroughly. Remove the stem and seeds. Dice the bell peppers as well.
  3. 3. Peel the potatoes and rinse them. Cut the potatoes into cubes.
  4. 4. Heat oil in a pot over medium heat.
  5. 5. Sauté the bell peppers together with the onions for about 1 to 2 minutes until translucent. (Translucent means the vegetables become soft and slightly see-through).
  6. 6. Add the tomato paste and the potato cubes. Sauté everything for another 2 minutes.
  7. 7. Deglaze the mixture with broth.
  8. 8. Season with salt, pepper, a bay leaf, and paprika powder.
  9. 9. Bring the mixture to a boil.
  10. 10. Place the lid on the pot and let the goulash simmer for about 20 to 25 minutes.
  11. 11. Slice the Vienna sausages in the meantime.
  12. 12. Wash the parsley and pat it dry.
  13. 13. Pluck the parsley leaves from the stems and chop them finely.
  14. 14. Add the sausage slices to the goulash and warm them for about 5 minutes.
  15. 15. Serve the goulash with a dollop of crème fraîche.
  16. 16. Sprinkle the dish with the chopped parsley. Enjoy your meal!
