  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into small cubes.
  3. 3. Halve the onion and peel it.
  4. 4. Dice the onion into small pieces as well.
  5. 5. Heat oil and butter in a pot over medium heat.
  6. 6. Sauté the potato and onion cubes in it for about 3 minutes.
  7. 7. Deglaze the mixture with white wine.
  8. 8. Add vegetable broth and bring the soup to a boil.
  9. 9. Season the soup with salt.
  10. 10. Simmer the soup on low heat for about 25 minutes.
  11. 11. Check if the potatoes are tender.
  12. 12. Wash the parsley and shake it dry.
  13. 13. Remove the parsley leaves from the stems.
  14. 14. Roughly chop the parsley leaves.
  15. 15. Pour the cream into the soup.
  16. 16. Blend the soup until creamy.
  17. 17. Add more broth if the soup is too thick.
  18. 18. Season the soup with salt and pepper to taste.
  19. 19. Add the sausages to the soup.
  20. 20. Warm the sausages for about 10 minutes on low heat.
  21. 21. Serve the soup in bowls.
  22. 22. Sprinkle the chopped parsley over the top.
  23. 23. Serve the soup hot.
