🍲 Creamy Potato Soup with Sausages

Ingredients
- potatoes, mainly waxy 1 kg
- onions, yellow 1 pc
- oil 3 tbsp
- butter 3 tbsp
- white wine, dry 200 ml
- vegetable broth 1 L
- salt pinch
- parsley, fresh 20 g
- whipping cream 200 g
- pepper, black ground pinch
- Vienna sausages 8 pc
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Halve the onion and peel it.
- 4. Dice the onion into small pieces as well.
- 5. Heat oil and butter in a pot over medium heat.
- 6. Sauté the potato and onion cubes in it for about 3 minutes.
- 7. Deglaze the mixture with white wine.
- 8. Add vegetable broth and bring the soup to a boil.
- 9. Season the soup with salt.
- 10. Simmer the soup on low heat for about 25 minutes.
- 11. Check if the potatoes are tender.
- 12. Wash the parsley and shake it dry.
- 13. Remove the parsley leaves from the stems.
- 14. Roughly chop the parsley leaves.
- 15. Pour the cream into the soup.
- 16. Blend the soup until creamy.
- 17. Add more broth if the soup is too thick.
- 18. Season the soup with salt and pepper to taste.
- 19. Add the sausages to the soup.
- 20. Warm the sausages for about 10 minutes on low heat.
- 21. Serve the soup in bowls.
- 22. Sprinkle the chopped parsley over the top.
- 23. Serve the soup hot.
