🍽️ Crunchy Potato Bread

Ingredients
- potatoes, mainly waxy 400 g
- salt 2 tsp
- yeast, fresh 0.5 pcs.
- sugar 0.5 tsp
- water 200 ml
- wheat flour, Type 405 530 g
- marjoram, dried 2 tsp
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Cut the potatoes into small cubes.
- 4. Place the potato cubes in a pot.
- 5. Cover the potatoes with salted water.
- 6. Bring the water to a boil.
- 7. Cook the potatoes for about 25 minutes until they are soft.
- 8. Drain the cooking water.
- 9. Let the potatoes steam off for a moment.
- 10. Press the warm potatoes through a potato ricer immediately.
- 11. Let the mashed potatoes cool down.
- 12. Take a large bowl.
- 13. Crumble the yeast into the bowl.
- 14. Add the sugar to the yeast powder.
- 15. Pour in lukewarm water.
- 16. Stir the mixture well.
- 17. Cover the bowl.
- 18. Let the yeast mixture rest for about 15 minutes.
- 19. Add the flour to the bowl.
- 20. Add the cooled mashed potatoes.
- 21. Take 2 level teaspoons of salt.
- 22. Add the salt to the bowl.
- 23. Add marjoram to the bowl.
- 24. Pour the yeast mixture into the bowl.
- 25. Knead the ingredients for about 3 to 4 minutes.
- 26. Check if the dough is smooth and elastic.
- 27. Make sure the dough does not stick.
- 28. If necessary, add a little more flour or water.
- 29. Cover the bowl with the dough.
- 30. Place the bowl in a warm spot.
- 31. Let the dough rise for about 1 hour.
- 32. Sprinkle some flour on the work surface.
- 33. Take the dough out of the bowl.
- 34. Sprinkle some flour on your hands.
- 35. Knead the dough on the work surface again.
- 36. Shape the dough into an oval loaf.
- 37. Line a baking sheet with parchment paper.
- 38. Place the dough on the baking sheet.
- 39. Cover the dough.
- 40. Let the dough rise for another 20 to 30 minutes.
- 41. Preheat the oven to 220 degrees Celsius (fan).
- 42. Take a bowl with hot water.
- 43. Place the bowl on the bottom of the oven.
- 44. Take a sharp knife.
- 45. Carefully score the top of the bread several times.
- 46. Place the bread in the hot oven.
- 47. Bake the bread for about 15 minutes.
- 48. Reduce the oven temperature to 200 degrees Celsius.
- 49. Bake the bread for another 40 minutes.
- 50. Cover the top of the bread with aluminum foil towards the end if it gets too dark.
- 51. Tap on the bottom of the bread.
- 52. If it sounds hollow, the bread is done.
- 53. Take the bread out of the oven.
- 54. Place the bread on a wire rack.
- 55. Let the bread cool down.
- 56. Enjoy!
