🍽️ Creamy Potato, Wild Garlic and Smoked Tofu Bake

Ingredients
- potatoes, mainly firm 1 kg
- salt pinch
- smoked tofu 1 pc.
- onions, red 1 pc.
- oil 2 tbsp
- woodruff 40 g
- garlic cloves 2 pc.
- vegan fresh spread, plain 150 g
- oat drink Barista 100 ml
- cornstarch 2 tbsp
- pepper, black ground pinch
- nutmeg, ground pinch
- Vemondo Grating Delight 150 g
- margarine, vegan 1 tsp
- breadcrumbs 3 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius (convection mode).
- 2. Wash the potatoes thoroughly.
- 3. Peel the potatoes.
- 4. Cut the potatoes into small cubes.
- 5. Place the potato cubes in a pot.
- 6. Cover the potatoes with salted water.
- 7. Bring the water to a boil.
- 8. Reduce the heat to medium.
- 9. Cook the potatoes covered for approx. 10 minutes.
- 10. Cut the smoked tofu into cubes.
- 11. Halve the onion.
- 12. Peel the onion.
- 13. Dice the onion.
- 14. Heat oil in a frying pan over medium heat.
- 15. Fry the smoked tofu and onions in the pan for approx. 5 minutes.
- 16. Wash the wild garlic.
- 17. Shake the wild garlic dry.
- 18. Roughly chop half of the wild garlic.
- 19. Peel the garlic.
- 20. Finely chop the garlic.
- 21. Add vegan spread natural, oat drink barista and cornstarch to a bowl.
- 22. Whisk the ingredients in the bowl thoroughly with a whisk.
- 23. Season the mixture with salt, pepper and nutmeg.
- 24. Add the chopped wild garlic and garlic to the bowl.
- 25. Fold in the wild garlic and garlic into the sauce.
- 26. Drain the potatoes in a colander.
- 27. Let the potatoes drain.
- 28. Place the potatoes in a baking dish.
- 29. Gently mix the potatoes with the smoked tofu and onions.
- 30. Pour the wild garlic sauce over the potato mixture.
- 31. Sprinkle the bake with grated cheese alternative (Reibegenuss).
- 32. Bake the bake for approx. 30 minutes in the oven until golden brown.
- 33. Melt margarine in a frying pan over medium heat.
- 34. Add breadcrumbs to the pan.
- 35. Toast the breadcrumbs for approx. 5 minutes until golden brown.
- 36. Finely chop the other half of the wild garlic.
- 37. Mix the toasted breadcrumbs and wild garlic in a bowl.
- 38. Season the breadcrumb mixture with salt.
- 39. Remove the baking dish from the oven.
- 40. Serve the potato bake onto plates.
- 41. Garnish the bake with the wild garlic crumbs.
- 42. Serve the bake and enjoy your meal!
