🍽️ Potato-Zucchini Fritters with Smoked Salmon and Cucumber Salad

Ingredients
- potatoes, mainly waxy 800 g
- zucchini 1 pc.
- eggs 2 pc.
- salt pinch
- pepper, black ground pinch
- dill, fresh 20 g
- cucumbers 1 pc.
- yogurt, plain 150 g
- olive oil 1 tbsp
- sugar pinch
- smoked salmon 300 g
Instructions
- 1. Preheat the oven to 200 °C (convection). Peel the potatoes and grate them coarsely into a bowl. Thoroughly wash the zucchini, trim the ends, and grate them coarsely as well. Mix everything well with egg, salt, and pepper.
- 2. Distribute the potato-zucchini mixture onto two baking sheets lined with baking paper in portions of about 5 cm. Then press flat and bake the pancakes in the oven for about 25 minutes. Turn after about 10 minutes.
- 3. Wash the dill, pat dry, remove coarse stems, and chop finely. Wash the cucumber, peel, halve lengthwise, and slice thinly. Combine cucumber, dill, yogurt, and olive oil in a bowl and season with salt, pepper, and sugar.
- 4. Take the potato-zucchini pancakes out of the oven. Serve with smoked salmon and the cucumber salad. Enjoy your meal!
