  1. 1. Preheat the oven to 200 °C (convection). Peel the potatoes and grate them coarsely into a bowl. Thoroughly wash the zucchini, trim the ends, and grate them coarsely as well. Mix everything well with egg, salt, and pepper.
  2. 2. Distribute the potato-zucchini mixture onto two baking sheets lined with baking paper in portions of about 5 cm. Then press flat and bake the pancakes in the oven for about 25 minutes. Turn after about 10 minutes.
  3. 3. Wash the dill, pat dry, remove coarse stems, and chop finely. Wash the cucumber, peel, halve lengthwise, and slice thinly. Combine cucumber, dill, yogurt, and olive oil in a bowl and season with salt, pepper, and sugar.
  4. 4. Take the potato-zucchini pancakes out of the oven. Serve with smoked salmon and the cucumber salad. Enjoy your meal!
