🍽️ Potato Spinach Casserole with Eggs

Ingredients
- potatoes, mainly waxy 1 kg
- onions, yellow 1 pc.
- oil 2 tbsp
- whipping cream 400 ml
- cream spinach, frozen 500 g
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
- Black Forest ham 4 slices
- eggs 4 pc.
Instructions
- 1. Preheat the oven to 180 °C (top/bottom heat). Peel the potatoes, wash them, and slice them thinly or grate them.
- 2. Heat oil in a pot over medium heat and sauté the onion for about 2 minutes until translucent. Add the cream and the frozen spinach and warm everything for approx. 5 minutes until the spinach is thawed. Season the mixture with salt, pepper, and nutmeg.
- 3. Spread the potato slices in a baking dish and pour the spinach-cream mixture over them. Bake the casserole in the oven for about 35 minutes.
- 4. Carefully remove the casserole from the oven and press 4 indentations into it with a spoon. Line the indentations with ham, crack an egg into each one, and bake the casserole for another approx. 10 minutes in the oven. Let it cool briefly and serve. Enjoy your meal!
