🍲 Potato-Leek Soup

Ingredients
- onions, yellow 1 pc
- potatoes, mostly waxy 500 g
- leek 1 pc
- oil 2 tbsp
- vegetable broth 1 L
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
- baguette 1 pc
Instructions
- 1. Halve the onion, peel it, and dice it. Peel the potatoes and cut them into cubes. Slice the leek lengthwise, remove the root ends, cut it into strips, and wash thoroughly.
- 2. Heat the oil in a pot over high heat and sauté the onion with the potatoes and leek for about 4 minutes. Remove 1 tablespoon of leek from the pan and set it aside for garnish. Deglaze the pot with vegetable broth and let it simmer for about 20 minutes over medium heat.
- 3. Thoroughly blend the soup and season with salt, pepper, and nutmeg. Serve in plates and enjoy with baguette. Bon appétit!
