Ingredients
- Kohlrabi 2 pcs
- Potatoes, mostly waxy 500 g
- Butter 1 tbsp
- Salt pinch
- Pepper, black ground pinch
- Parsley, fresh 30 g
- Vegetable broth 100 ml
- Whipping cream 200 g
- Eggs 2 pcs
Instructions
- 1. Peel the kohlrabi and set the tender greens aside.
- 2. Slice or shred the kohlrabi bulb into thin rounds.
- 3. Peel the potatoes and wash them thoroughly.
- 4. Slice or shred the potatoes into thin rounds as well.
- 5. Grease a shallow baking dish with a diameter of about 30 centimeters.
- 6. Layer the kohlrabi and potato slices alternately in the dish.
- 7. Season the vegetable layers with salt and pepper.
- 8. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 9. Wash the parsley and shake it dry.
- 10. Pluck the parsley leaves from the stems.
- 11. Finely chop the reserved kohlrabi greens and the parsley leaves.
- 12. Mix the chopped herbs in a bowl with broth, cream, and eggs.
- 13. Season the liquid mixture with salt and pepper to taste.
- 14. Pour the mixture evenly over the vegetables in the baking dish.
- 15. Bake the gratin in the oven for about 35 to 45 minutes.
- 16. Carefully remove the finished gratin from the oven.
- 17. Serve the dish immediately while hot.
