🍽️ Crispy Potato and Vegetable Fritters with Chicken Strips and Radish Quark

Ingredients
- potatoes, mainly waxy 750 g
- carrots 3 pcs.
- spring onions 1 bunch
- eggs 2 pcs.
- salt pinch
- pepper, black ground pinch
- oil 3 tbsp
- chicken breast fillets 600 g
- radishes 1 bunch
- quark 40 % fat in total 350 g
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan.
- 2. Peel the potatoes and the carrots.
- 3. Wash the vegetables thoroughly.
- 4. Grate the potatoes and carrots coarsely.
- 5. Clean the spring onions.
- 6. Dry the spring onions with a kitchen towel.
- 7. Remove the roots from the spring onions.
- 8. Slice the spring onions into thin rings.
- 9. Take half of the spring onion rings and put them in a bowl.
- 10. Add the eggs to the bowl with the onions.
- 11. Mix the onions and eggs well together.
- 12. Season the mixture with salt and pepper.
- 13. Heat 1 tablespoon of oil in a large frying pan over high heat.
- 14. Place portions of the potato mixture into the hot pan.
- 15. Shape the portions into flat fritters with a diameter of about 5 cm.
- 16. Press the fritters down slightly.
- 17. Fry the fritters on one side for about 3 minutes until golden brown.
- 18. Turn the fritters and fry them on the other side for about 3 minutes until golden brown.
- 19. Place the finished fritters on a baking sheet lined with baking paper.
- 20. Keep the fritters warm in the preheated oven.
- 21. Rinse the chicken breast under running water.
- 22. Dry the chicken breast with a kitchen towel.
- 23. Cut the chicken breast into strips.
- 24. Season the chicken strips with salt.
- 25. Heat 1 tablespoon of oil in a second frying pan over high heat.
- 26. Fry the chicken strips on all sides for about 2 minutes until golden brown.
- 27. Add the remaining spring onion rings to the pan.
- 28. Season the chicken with the onions with salt and pepper.
- 29. Turn off the stove.
- 30. Cover the pan.
- 31. Let the chicken rest in the pan for about 5 minutes.
- 32. Wash the radishes under running water.
- 33. Cut off the ends of the radishes.
- 34. Slice the radishes into thin slices or shave them thinly.
- 35. Put the quark into a separate bowl.
- 36. Season the quark with salt and pepper.
- 37. Stir the radish slices into the quark.
- 38. Take the potato fritters out of the oven.
- 39. Plate the fritters, the chicken strips, and the radish quark.
- 40. Enjoy your meal!
