  3. 3. Wash the vegetables thoroughly.
  4. 4. Grate the potatoes and carrots coarsely.
  5. 5. Clean the spring onions.
  6. 6. Dry the spring onions with a kitchen towel.
  7. 7. Remove the roots from the spring onions.
  8. 8. Slice the spring onions into thin rings.
  9. 9. Take half of the spring onion rings and put them in a bowl.
  10. 10. Add the eggs to the bowl with the onions.
  11. 11. Mix the onions and eggs well together.
  12. 12. Season the mixture with salt and pepper.
  13. 13. Heat 1 tablespoon of oil in a large frying pan over high heat.
  14. 14. Place portions of the potato mixture into the hot pan.
  15. 15. Shape the portions into flat fritters with a diameter of about 5 cm.

  17. 17. Fry the fritters on one side for about 3 minutes until golden brown.
