🍲 Potato-Bean Soup with Almond Pesto

Ingredients
- oil 2.5 tbsp
- almonds, whole 75 g
- basil, fresh 50 g
- parmesan 30 g
- olive oil 60 ml
- spring onions 1 bunch
- salt pinch
- green beans 350 g
- potatoes, mostly waxy 600 g
- vegetable broth 900 ml
- canned white beans 800 g
Instructions
- 1. Heat 1 teaspoon of oil in a pan over medium heat.
- 2. Roast the almonds in it for about 2 minutes until they are golden brown.
- 3. Remove the almonds from the pan and place them on a plate.
- 4. Let the almonds cool down briefly.
- 5. Roughly chop the cooled almonds.
- 6. Wash the basil and shake it dry.
- 7. Remove the thick stems from the basil.
- 8. Grate the Parmesan cheese roughly.
- 9. Place the chopped almonds, basil, and Parmesan into a tall container.
- 10. Blend the ingredients together with olive oil to make a pesto.
- 11. Season the pesto with salt and pepper.
- 12. Store the pesto in the refrigerator until you need it.
- 13. Wash the green beans.
- 14. Trim the ends of the green beans thinly.
- 15. Halve the green beans.
- 16. Wash the spring onions.
- 17. Remove the ends of the spring onions.
- 18. Slice the spring onions into rings.
- 19. Wash the potatoes.
- 20. Peel the potatoes.
- 21. Dice the potatoes roughly.
- 22. Heat 2 tablespoons of oil in a large pot over high heat.
- 23. Sauté the spring onions and potatoes for 2 to 3 minutes.
- 24. Deglaze the mixture with the broth.
- 25. Bring the soup to a boil.
- 26. Season the soup with salt and pepper.
- 27. Cover the pot.
- 28. Let the soup cook for approx. 10 minutes.
- 29. Add the green beans to the soup.
- 30. Let the soup continue to cook for about 10 minutes.
- 31. Drain the white beans in a sieve.
- 32. Rinse the white beans.
- 33. Let the white beans drain slightly.
- 34. Add the white beans to the soup after 5 minutes of cooking the green beans.
- 35. Let the soup cook with the white beans for approx. 5 minutes.
- 36. Taste the soup and adjust seasoning with salt and pepper as desired.
- 37. Serve the soup in deep plates.
- 38. Add the pesto to the soup.
- 39. Enjoy your meal!
