  1. 1. Heat 1 teaspoon of oil in a pan over medium heat.
  2. 2. Roast the almonds in it for about 2 minutes until they are golden brown.
  3. 3. Remove the almonds from the pan and place them on a plate.

  5. 5. Roughly chop the cooled almonds.
  6. 6. Wash the basil and shake it dry.
  7. 7. Remove the thick stems from the basil.
  8. 8. Grate the Parmesan cheese roughly.
  9. 9. Place the chopped almonds, basil, and Parmesan into a tall container.
  10. 10. Blend the ingredients together with olive oil to make a pesto.
  11. 11. Season the pesto with salt and pepper.
  12. 12. Store the pesto in the refrigerator until you need it.
  13. 13. Wash the green beans.
  14. 14. Trim the ends of the green beans thinly.
  15. 15. Halve the green beans.
  16. 16. Wash the spring onions.
  17. 17. Remove the ends of the spring onions.
  18. 18. Slice the spring onions into rings.
  19. 19. Wash the potatoes.
  20. 20. Peel the potatoes.
  21. 21. Dice the potatoes roughly.
  22. 22. Heat 2 tablespoons of oil in a large pot over high heat.
  23. 23. Sauté the spring onions and potatoes for 2 to 3 minutes.
  24. 24. Deglaze the mixture with the broth.
  25. 25. Bring the soup to a boil.
  26. 26. Season the soup with salt and pepper.
  27. 27. Cover the pot.
  28. 28. Let the soup cook for approx. 10 minutes.
  29. 29. Add the green beans to the soup.
  30. 30. Let the soup continue to cook for about 10 minutes.
  31. 31. Drain the white beans in a sieve.
  32. 32. Rinse the white beans.
  33. 33. Let the white beans drain slightly.
  34. 34. Add the white beans to the soup after 5 minutes of cooking the green beans.
  35. 35. Let the soup cook with the white beans for approx. 5 minutes.
  36. 36. Taste the soup and adjust seasoning with salt and pepper as desired.
  37. 37. Serve the soup in deep plates.
  38. 38. Add the pesto to the soup.
