🍽️ Crispy Flammkuchen with Potatoes, Pears, Spiced Honey and Arugula

Ingredients
- Potatoes, mainly waxy 500 g
- Salt Pinch
- Pears 1 pc.
- Onions, red 1 pc.
- Thyme, fresh 5 g
- sour cream 300 g
- Sweet mustard 1 tbsp
- Pepper, black ground Pinch
- Puff pastry 2 pc.
- Oil 2 tbsp
- Honey 1 tbsp
- Arugula 50 g
Instructions
- 1. Preheat the oven to 250 degrees Celsius using top and bottom heat.
- 2. Wash the potatoes thoroughly and slice them into very thin rounds.
- 3. Place the potato slices in a pot with salted water and bring it to a boil.
- 4. Cook the potatoes covered over medium heat for about five minutes until they are firm to the bite.
- 5. Drain the potatoes in a colander and rinse them under cold water.
- 6. Dry the potatoes on kitchen paper.
- 7. Wash the pear and cut it into quarters.
- 8. Remove the core of the pears and cut the flesh into thin wedges.
- 9. Halve the onion, peel it, and slice it into thin rings.
- 10. Rinse the thyme and pick the leaves off the stems.
- 11. Finely chop the thyme leaves.
- 12. Mix sour cream with sweet mustard, salt, and pepper in a bowl.
- 13. Unroll the puff pastry together with the baking paper.
- 14. Place the dough on a baking sheet.
- 15. Spread the sour cream mixture evenly over the dough.
- 16. Leave a border of about one centimeter free.
- 17. Top the dough with the potato slices.
- 18. Distribute the pear wedges on top.
- 19. Add the onion rings.
- 20. Drizzle the flammkuchen with one tablespoon of oil.
- 21. Sprinkle the chopped thyme evenly over it.
- 22. Season to taste.
- 23. Place the flammkuchen on the lowest rack and bake it for about 15 minutes.
- 24. Mix honey, salt, pepper, and one tablespoon of oil in a small bowl.
- 25. Take the flammkuchen out of the oven.
- 26. Drizzle it with the spiced honey-oil mixture.
- 27. Place it in the upper third of the oven and bake for another two minutes until golden brown.
- 28. Wash the arugula thoroughly.
- 29. Spin the arugula dry.
- 30. Take the finished flammkuchen out of the oven.
- 31. Cut the flammkuchen into pieces.
- 32. Top the pieces with the arugula.
- 33. Serve the flammkuchen and enjoy your meal.
