  1. 1. Preheat the oven to 250 degrees Celsius using top and bottom heat.
  2. 2. Wash the potatoes thoroughly and slice them into very thin rounds.
  3. 3. Place the potato slices in a pot with salted water and bring it to a boil.
  4. 4. Cook the potatoes covered over medium heat for about five minutes until they are firm to the bite.
  5. 5. Drain the potatoes in a colander and rinse them under cold water.
  6. 6. Dry the potatoes on kitchen paper.
  7. 7. Wash the pear and cut it into quarters.
  8. 8. Remove the core of the pears and cut the flesh into thin wedges.
  9. 9. Halve the onion, peel it, and slice it into thin rings.
  10. 10. Rinse the thyme and pick the leaves off the stems.
  11. 11. Finely chop the thyme leaves.
  12. 12. Mix sour cream with sweet mustard, salt, and pepper in a bowl.
  13. 13. Unroll the puff pastry together with the baking paper.
  14. 14. Place the dough on a baking sheet.
  15. 15. Spread the sour cream mixture evenly over the dough.
  16. 16. Leave a border of about one centimeter free.
  17. 17. Top the dough with the potato slices.
  18. 18. Distribute the pear wedges on top.
  19. 19. Add the onion rings.
  20. 20. Drizzle the flammkuchen with one tablespoon of oil.
  21. 21. Sprinkle the chopped thyme evenly over it.
  22. 22. Season to taste.
  23. 23. Place the flammkuchen on the lowest rack and bake it for about 15 minutes.
  24. 24. Mix honey, salt, pepper, and one tablespoon of oil in a small bowl.
  25. 25. Take the flammkuchen out of the oven.
  26. 26. Drizzle it with the spiced honey-oil mixture.
  27. 27. Place it in the upper third of the oven and bake for another two minutes until golden brown.
  28. 28. Wash the arugula thoroughly.
  29. 29. Spin the arugula dry.
  30. 30. Take the finished flammkuchen out of the oven.
  31. 31. Cut the flammkuchen into pieces.
  32. 32. Top the pieces with the arugula.
  33. 33. Serve the flammkuchen and enjoy your meal.
