🍲 Creamy Carrot Soup with Ham Strips

Ingredients
- carrots 600 g
- butter 2 tbsp
- dry white wine 100 ml
- vegetable broth 800 ml
- salt pinch
- black ground pepper pinch
- lemon 1 pcs
- fresh parsley 20 g
- whipping cream 200 g
- Serrano ham 50 g
Instructions
- 1. Thoroughly wash the carrots under running water.
- 2. Peel the carrots and cut off the ends.
- 3. Cut the carrots into small, uniform pieces.
- 4. Melt some butter in a pot over medium heat.
- 5. Sauté the carrot pieces in the butter for about 3 to 4 minutes.
- 6. Deglaze the carrots with white wine.
- 7. Let the mixture boil for about 2 minutes.
- 8. Add broth to the soup.
- 9. Season the soup with salt and pepper to taste.
- 10. Bring the soup to a boil.
- 11. Simmer the soup for about 20 minutes over medium heat.
- 12. Wash the lemon under running water.
- 13. Cut the lemon in half.
- 14. Squeeze the juice from the lemon.
- 15. Wash the parsley under running water.
- 16. Pat the parsley dry with a kitchen towel.
- 17. Separate the parsley leaves from the stems.
- 18. Finely chop the parsley leaves.
- 19. Add cream to the finished soup.
- 20. Puree the soup until smooth using a hand blender.
- 21. Finish the soup with the freshly squeezed lemon juice.
- 22. Cut the ham into wide strips.
- 23. Pour the soup into bowls.
- 24. Top the soup with the ham strips.
- 25. Sprinkle the chopped parsley over the soup.
- 26. Serve the soup hot.
