  1. 1. Wash the carrots thoroughly and peel them. Cut off the hard ends.
  2. 2. Grate the carrots coarsely into a large bowl.
  3. 3. Wash the apple and grate it finely into slices or coarsely into the same bowl.
  4. 4. Halve the lemon and squeeze the juice directly over the fruit and vegetables.
  5. 5. Add three tablespoons of lemon juice, oil, salt, pepper, and sugar to the bowl.
  6. 6. Mix all ingredients thoroughly together.
  7. 7. Let the salad rest briefly to allow the flavors to meld.
  8. 8. Wash the parsley thoroughly.
  9. 9. Remove the coarse stems from the parsley.
  10. 10. Chop the parsley coarsely.
  11. 11. Taste the salad again and adjust with salt, pepper, and sugar.
  12. 12. Sprinkle the finished salad with the chopped parsley and sunflower seeds.
  13. 13. Serve the salad immediately.
