🍰 Carrot Cake with Cream Cheese Frosting

Ingredients
- Carrots 350 g
- Walnut kernels 75 g
- Oranges 1 pcs
- Sunflower oil 225 ml
- Brown sugar 225 g
- Vanilla sugar 20 g
- Eggs 3 pcs
- Wheat flour, Type 405 275 g
- Baking powder 15 g
- Nutmeg, ground pinch
- Cinnamon 0.5 tsp
- Raisins 75 g
- Butter 50 g
- Icing sugar 125 g
- Cream cheese, plain 200 g
- Chocolate, white 30 g
Instructions
- 1. Preheat the oven to 150 degrees Celsius using top and bottom heat.
- 2. Peel the carrots and cut off the ends.
- 3. Grate the carrots coarsely.
- 4. Chop the walnuts coarsely.
- 5. Rinse the orange thoroughly under hot water.
- 6. Finely grate about one teaspoon of the orange zest.
- 7. Cut the orange in half.
- 8. Squeeze the juice from the orange halves.
- 9. Mix the oil, sugar, vanilla sugar, and orange juice together in a bowl.
- 10. Stir in the eggs one by one.
- 11. Combine the flour, baking powder, and spices in a separate bowl.
- 12. Add the flour mixture to the liquid batter.
- 13. Fold the grated carrots into the batter.
- 14. Fold the chopped walnuts into the batter.
- 15. Fold the raisins into the batter.
- 16. Grease a 26-centimeter springform pan.
- 17. Pour the batter into the prepared pan.
- 18. Bake the cake in the oven for about 75 minutes.
- 19. Let the cake cool in the pan for about 15 minutes after baking.
- 20. Remove the cake from the pan and let it cool completely on a wire rack.
- 21. Mix the butter, powdered sugar, cream cheese, and grated orange zest briefly in a bowl.
- 22. Spread the cream cheese mixture over the cooled cake.
- 23. Grate the chocolate coarsely.
- 24. Garnish the cake with the grated chocolate.
- 25. Serve the cake.
