  3. 3. Halve the onions and remove the skin.
  4. 4. Dice the onions finely.
  5. 5. Cut the orange in half.
  6. 6. Squeeze the juice from the orange.
  7. 7. Heat one tablespoon of oil in a pot over medium heat.
  8. 8. Sauté the onions and carrots for about three minutes.
  9. 9. Add the honey and continue to sauté the mixture for one more minute.
  10. 10. Pour the orange juice and broth over the carrots.
  11. 11. Season the mixture with salt and pepper.
  12. 12. Cover the pot and let the carrots simmer for about twenty minutes.
  13. 13. Add a little more broth if needed to prevent drying out.
  14. 14. Let the carrots cool down completely.
  15. 15. Add the cashew nuts to the mixture.
  16. 16. Blend everything until smooth.
  17. 17. Season the spread with curry, salt, and pepper to taste.
  18. 18. Transfer the spread into a bowl.
  19. 19. Drizzle the remaining oil over the spread.
