🍽️ Creamy Carrot Cashew Spread

Ingredients
- carrots 400 g
- onions, yellow 2 pcs
- oranges 1 pcs
- olive oil 2 tbsp
- honey 2 tsp
- vegetable broth 300 ml
- salt pinch
- pepper, black ground pinch
- cashew nuts 50 g
- curry powder pinch
Instructions
- 1. Peel the carrots and trim off the ends.
- 2. Slice the carrots into thin rounds.
- 3. Halve the onions and remove the skin.
- 4. Dice the onions finely.
- 5. Cut the orange in half.
- 6. Squeeze the juice from the orange.
- 7. Heat one tablespoon of oil in a pot over medium heat.
- 8. Sauté the onions and carrots for about three minutes.
- 9. Add the honey and continue to sauté the mixture for one more minute.
- 10. Pour the orange juice and broth over the carrots.
- 11. Season the mixture with salt and pepper.
- 12. Cover the pot and let the carrots simmer for about twenty minutes.
- 13. Add a little more broth if needed to prevent drying out.
- 14. Let the carrots cool down completely.
- 15. Add the cashew nuts to the mixture.
- 16. Blend everything until smooth.
- 17. Season the spread with curry, salt, and pepper to taste.
- 18. Transfer the spread into a bowl.
- 19. Drizzle the remaining oil over the spread.
- 20. Enjoy your meal!
