🍰 Caramelized Apples with Lemon Yogurt

Ingredients
- Pumpkin seeds 6 tbsp
- Sugar 3 tbsp
- Salt pinch
- Apples, red 2 pcs
- Apple juice 100 ml
- Cinnamon pinch
- Lemons 1 pc
- Yogurt, plain 400 g
Instructions
- 1. Heat a pot over medium heat.
- 2. Toast the pumpkin seeds in it for about 2 minutes.
- 3. Sprinkle 2 tablespoons of sugar over the seeds.
- 4. Caramelize the sugar for approx. 2 minutes until it is golden brown.
- 5. Season the caramelized seeds with a pinch of salt.
- 6. Let the seeds cool completely on baking paper.
- 7. Wash the apples thoroughly under running water.
- 8. Peel the apples and remove the core.
- 9. Cut the flesh into small cubes.
- 10. Place the pot back on medium heat.
- 11. Lightly caramelize 1 tablespoon of sugar for approx. 2 minutes.
- 12. Deglaze the sugar with apple juice.
- 13. Add the apple cubes and cinnamon to the pot.
- 14. Cook the apples on low heat for about 5 minutes until soft.
- 15. Rinse the lemon under hot water.
- 16. Grate about 1 teaspoon of lemon zest finely.
- 17. Halve the lemon and squeeze out the juice.
- 18. Mix the yogurt in a bowl with the zest and juice.
- 19. Divide the warm apple compote among 4 glasses or bowls.
- 20. Top the compote with the lemon yogurt.
- 21. Coarsely chop the cooled pumpkin seeds.
- 22. Sprinkle the seeds over the dessert as a topping.
