  1. 1. Heat a pot over medium heat.
  2. 2. Toast the pumpkin seeds in it for about 2 minutes.
  3. 3. Sprinkle 2 tablespoons of sugar over the seeds.
  4. 4. Caramelize the sugar for approx. 2 minutes until it is golden brown.
  5. 5. Season the caramelized seeds with a pinch of salt.
  6. 6. Let the seeds cool completely on baking paper.
  7. 7. Wash the apples thoroughly under running water.
  8. 8. Peel the apples and remove the core.
  9. 9. Cut the flesh into small cubes.
  10. 10. Place the pot back on medium heat.
  11. 11. Lightly caramelize 1 tablespoon of sugar for approx. 2 minutes.
  12. 12. Deglaze the sugar with apple juice.
  13. 13. Add the apple cubes and cinnamon to the pot.
  14. 14. Cook the apples on low heat for about 5 minutes until soft.
  15. 15. Rinse the lemon under hot water.
  16. 16. Grate about 1 teaspoon of lemon zest finely.
  17. 17. Halve the lemon and squeeze out the juice.
  18. 18. Mix the yogurt in a bowl with the zest and juice.
  19. 19. Divide the warm apple compote among 4 glasses or bowls.
  20. 20. Top the compote with the lemon yogurt.
  21. 21. Coarsely chop the cooled pumpkin seeds.
  22. 22. Sprinkle the seeds over the dessert as a topping.
