🍰 Juicy Apple Muffins with Homemade Caramel

Ingredients
- Apples, red 400 g
- butter 250 g
- Sugar 350 g
- Vanilla Sugar 2 tsp
- Salt pinch
- Eggs 2 pcs
- Wheat flour, Type 405 150 g
- Baking powder 2 tsp
- Whipping cream 250 ml
Instructions
- 1. Turn on the oven to 180 degrees Celsius with top and bottom heat.
- 2. Peel the apples and remove the core.
- 3. Cut the apples into small cubes.
- 4. Put the soft butter into a large bowl.
- 5. Beat the butter with a hand mixer and whisk until creamy.
- 6. Add 150 grams of sugar, vanilla sugar, and a pinch of salt to the bowl.
- 7. Mix the ingredients with the mixer until well combined.
- 8. Add the eggs and beat them in until creamy.
- 9. Sift the flour and baking powder over the bowl.
- 10. Stir the dry ingredients quickly into the mixture with a spoon.
- 11. Mix everything until you have a smooth batter.
- 12. Gently fold the apple cubes into the batter.
- 13. Grease the cups of a muffin tin or line them with paper liners.
- 14. Distribute the batter evenly among the cups.
- 15. Place the tin into the oven.
- 16. Bake the muffins for about 20 to 25 minutes.
- 17. Remove the muffins when they are golden brown.
- 18. Carefully release the muffins from the tin.
- 19. Place them on a rack and let them cool.
- 20. Put the remaining sugar into a pot.
- 21. Turn the stove burner to medium heat.
- 22. Let the sugar melt for about 2 minutes.
- 23. Wait until the sugar turns light brown and caramelizes.
- 24. Deglaze the caramel with cream.
- 25. Stir the mixture well until it is smooth.
- 26. Reduce the heat to low.
- 27. Let the sauce simmer for about 15 minutes.
- 28. Dip the cooled muffins into the caramel.
- 29. Serve the muffins immediately and enjoy.
