🍽️ Veal loin steaks with mashed potatoes and creamy sauerkraut

Ingredients
- veal loin steak 600 g
- potatoes, floury 1 kg
- salt pinch
- onions, yellow 1 pc.
- oil 2.5 tbsp
- sauerkraut 500 g
- whipping cream 100 g
- pepper, black ground pinch
- sugar pinch
- butter 3 tbsp
- chives, fresh 10 g
- grapes, white 100 g
- milk 200 ml
Instructions
- 1. Rinse the veal loin steaks under running water.
- 2. Pat the steaks dry with a kitchen towel.
- 3. Set the steaks aside to reach room temperature.
- 4. Peel the potatoes.
- 5. Rinse the peeled potatoes.
- 6. Cut the potatoes into coarse cubes.
- 7. Place the potato cubes in a pot.
- 8. Cover the potatoes with salted water.
- 9. Bring the water to a boil in a pot.
- 10. Reduce the heat to a medium setting.
- 11. Cover the pot with a lid.
- 12. Cook the potatoes until tender for about 20 to 25 minutes.
- 13. Halve the onions.
- 14. Peel the onions.
- 15. Dice the onions finely.
- 16. Heat 1 tablespoon of oil in a pot over medium heat.
- 17. Add the onion cubes to the hot oil.
- 18. Sweat the onions for about 2 minutes.
- 19. Ensure the onions do not take on any color.
- 20. Add the sauerkraut to the pot.
- 21. Top up the sauerkraut with cream.
- 22. Simmer the mixture for about 10 minutes.
- 23. Season the sauerkraut with salt.
- 24. Season the sauerkraut with pepper.
- 25. Season the sauerkraut with sugar.
- 26. Cover the pot with the sauerkraut.
- 27. Keep the sauerkraut warm.
- 28. Heat 1 tablespoon of oil in a frying pan on the highest setting.
- 29. Salt the veal loin steaks.
- 30. Sear the steaks in the hot oil.
- 31. Fry the steaks for about 2 minutes on each side.
- 32. Reduce the temperature to a low setting.
- 33. Add 1 tablespoon of butter to the pan.
- 34. Cover the pan with a lid.
- 35. Finish cooking the steaks for about 3 minutes.
- 36. Wrap the cooked steaks in aluminum foil.
- 37. Let the steaks rest in the foil for 6 to 8 minutes.
- 38. Rinse the chives under running water.
- 39. Shake the chives dry.
- 40. Cut the chives into fine rings.
- 41. Rinse the grapes under running water.
- 42. Pat the grapes dry with a kitchen towel.
- 43. Halve the grapes.
- 44. Place the chives and grapes in a bowl.
- 45. Add 1 teaspoon of oil to the bowl.
- 46. Use grape seed oil if possible.
- 47. Mix the chives and grapes with the oil.
- 48. Season the mixture with salt.
- 49. Season the mixture with pepper.
- 50. Drain the cooked potatoes.
- 51. Return the potatoes to the pot.
- 52. Add milk to the pot with the potatoes.
- 53. Add 2 tablespoons of butter to the pot.
- 54. Process the potatoes into a fine mash using a potato masher.
- 55. Season the mashed potatoes with salt.
- 56. Place the veal loin steaks on plates.
- 57. Add the creamy sauerkraut to the steaks.
- 58. Add the mashed potatoes to the steaks.
- 59. Distribute the grapes on the plate.
- 60. Serve the dish.

- 62. Tip: If you have an apple at home, you can grate it coarsely and mix it into the creamy sauerkraut.
