🍰 Kaiserschmarrn with Cherry Sauce

Ingredients
- Cherries in a jar 300 g
- cornstarch 1 tbsp
- eggs 4 pcs
- sugar 80 g
- salt pinch
- wheat flour, Type 405 250 g
- milk 300 ml
- butter 2 tbsp
- powdered sugar 1 tbsp
Instructions
- 1. Preheat the oven to 80 °C (top/bottom heat). Drain the cherries in a sieve and collect the cherry juice. In a bowl, mix 5 tbsp of cherry juice with cornstarch.
- 2. Bring 200 ml of cherry juice to a boil in a pot. Stir in the starch, add the cherries, and simmer for about 5 minutes over medium heat until the sauce thickens slightly. Keep the cherry sauce warm over low heat.
- 3. Separate the eggs. In a bowl, beat the egg whites stiff with a hand mixer. In another bowl, beat the egg yolks with sugar and salt until creamy. Stir in the flour alternately with the milk until a smooth, lump-free batter forms. Gently fold in the egg whites.
- 4. Melt 1 tbsp of butter in a pan over medium heat and bake half of the batter for about 2–3 minutes until golden brown. Flip and bake for another 3 minutes. Carefully tear into pieces with two forks and keep warm in the oven. Bake the remaining batter in the same way.
- 5. Serve the Kaiserschmarrn on plates and dust with powdered sugar. Serve with the warm cherry sauce. Enjoy your meal!
