  1. 1. Preheat the oven to 80 °C (top/bottom heat). Drain the cherries in a sieve and collect the cherry juice. In a bowl, mix 5 tbsp of cherry juice with cornstarch.
  2. 2. Bring 200 ml of cherry juice to a boil in a pot. Stir in the starch, add the cherries, and simmer for about 5 minutes over medium heat until the sauce thickens slightly. Keep the cherry sauce warm over low heat.
  3. 3. Separate the eggs. In a bowl, beat the egg whites stiff with a hand mixer. In another bowl, beat the egg yolks with sugar and salt until creamy. Stir in the flour alternately with the milk until a smooth, lump-free batter forms. Gently fold in the egg whites.
  4. 4. Melt 1 tbsp of butter in a pan over medium heat and bake half of the batter for about 2–3 minutes until golden brown. Flip and bake for another 3 minutes. Carefully tear into pieces with two forks and keep warm in the oven. Bake the remaining batter in the same way.
  5. 5. Serve the Kaiserschmarrn on plates and dust with powdered sugar. Serve with the warm cherry sauce. Enjoy your meal!
