🍰 Fluffy Kaiserschmarrn with Warm Cherries

Ingredients
- Eggs 4 pcs
- Sugar 130 g
- Wheat flour, Type 405 250 g
- Salt pinch
- Vanilla sugar 1 packet
- Milk 300 ml
- Raisins 50 g
- Sour cherries in a jar 350 g
- Cinnamon pinch
- Cornstarch 1 tbsp
- Butter 2 tbsp
- Powdered sugar 2 tbsp
Instructions
- 1. Separate the eggs. Place the whisk attachment into the mixing bowl.
- 2. Whip the egg whites on speed 4 for 3 minutes until stiff.
- 3. Transfer the egg whites to a separate bowl.
- 4. Add the egg yolks, 80 g sugar, flour, a pinch of salt, vanilla sugar, and milk to the mixing bowl.
- 5. Mix the ingredients for 50 seconds on speed 3 until smooth.
- 6. Gently fold the batter and raisins into the egg whites.
- 7. Drain the cherries and collect the juice.
- 8. Add 200 ml cherry juice, 50 g sugar, and a pinch of cinnamon to the clean mixing bowl.
- 9. Boil the liquid for 6 minutes on speed 1 at 120 °C.
- 10. Mix the cornstarch with a little water in a small bowl.
- 11. Pour the starch mixture through the lid opening into the boiling liquid.
- 12. Add the drained cherries.
- 13. Stir everything for 10 seconds on speed 2 in reverse.
- 14. Melt 1 tbsp of butter in a pan over medium heat.
- 15. Cook half of the batter for 2–3 minutes until golden brown on the bottom.
- 16. Flip the batter and cook for another 3 minutes.
- 17. Carefully tear the pancake into pieces using two forks.
- 18. Keep the pieces warm in the oven.
- 19. Cook the remaining batter in the same way.
- 20. Plate the Kaiserschmarrn.
- 21. Dust the pastry with powdered sugar.
- 22. Serve the Schmarrn with the warm cherry sauce.
