🍰 Fluffy Kaiserschmarrn with Homemade Apple Compote

Ingredients
- Apples, red 700 g
- Lemons 1 pc
- Apple juice 100 ml
- Sugar 70 g
- Cinnamon pinch
- Raisins 25 g
- Eggs 2 pc
- Milk 150 ml
- Wheat flour, Type 405 125 g
- Butter 2 tbsp
- Powdered sugar 2 tsp
Instructions
- 1. Peel the apples and remove the core.
- 2. Cut the apples into small cubes.
- 3. Wash the lemon thoroughly.
- 4. Squeeze the lemon and set the juice aside.
- 5. Place the apple cubes in a pot.
- 6. Add the lemon juice, 30 grams of sugar, and cinnamon.
- 7. Cook the mixture over medium heat for 8 to 10 minutes until the apples are soft.
- 8. Stir the raisins into the warm compote.
- 9. Let the compote cool down completely.
- 10. Separate the eggs so you have distinct egg yolks and egg whites.
- 11. Whisk the egg yolks with the remaining sugar in a bowl until frothy.
- 12. Stir in the milk and flour alternately into the egg yolk mixture.
- 13. Whisk the egg whites in a separate bowl until stiff peaks form.
- 14. Gently fold the beaten egg whites into the batter.
- 15. Melt 1 tablespoon of butter in a pan over medium heat.
- 16. Pour half of the batter into the hot pan.
- 17. Bake the Schmarrn for 2 to 3 minutes on each side until golden brown.
- 18. Tear the baked dough into small pieces using two forks.
- 19. Keep the pieces warm.
- 20. Bake the remaining batter in the same way.
- 21. Dust the finished Kaiserschmarrn with powdered sugar.
- 22. Serve the Schmarrn together with the cooled apple compote.
