  4. 4. Squeeze the lemon and set the juice aside.
  5. 5. Place the apple cubes in a pot.
  6. 6. Add the lemon juice, 30 grams of sugar, and cinnamon.
  7. 7. Cook the mixture over medium heat for 8 to 10 minutes until the apples are soft.
  8. 8. Stir the raisins into the warm compote.
  9. 9. Let the compote cool down completely.
  10. 10. Separate the eggs so you have distinct egg yolks and egg whites.
  11. 11. Whisk the egg yolks with the remaining sugar in a bowl until frothy.
  12. 12. Stir in the milk and flour alternately into the egg yolk mixture.
  13. 13. Whisk the egg whites in a separate bowl until stiff peaks form.
  14. 14. Gently fold the beaten egg whites into the batter.
  15. 15. Melt 1 tablespoon of butter in a pan over medium heat.
  16. 16. Pour half of the batter into the hot pan.
