  1. 1. Place the leaf gelatin in a bowl of cold water for a few minutes.
  2. 2. Heat the cream in a pot over low heat.
  3. 3. Add the coffee powder and 40 grams of sugar to the warm cream.
  4. 4. Let the mixture steep for about 10 minutes.
  5. 5. Squeeze the soaked gelatin lightly.
  6. 6. Stir the gelatin into the warm cream until it has completely dissolved.
  7. 7. Pour the coffee mixture through a sieve into four molds.
  8. 8. Place the molds in the refrigerator for about 3 hours.
  9. 9. Place the cherries in a sieve and catch the juice in a bowl.
  10. 10. Mix 4 tablespoons of cherry juice with cornstarch in a small bowl.
  11. 11. Bring the remaining cherry liquid to a boil in a pot together with 2 tablespoons of sugar.
  12. 12. Stir the cornstarch mixture into the boiling liquid.
  13. 13. Add the cherries and let the mixture simmer for about 1 minute until it thickens slightly.
  14. 14. Let the cherries cool down a bit.
  15. 15. Carefully turn out the panna cotta from the molds onto the plates.
  16. 16. Decorate the plates with the cherries.
