  2. 2. Heat the milk and cream mixture.
  3. 3. Add the coffee.
  4. 4. Let the mixture steep covered for 15 to 20 minutes.
  5. 5. Strain the coffee cream through a sieve.
  6. 6. Reheat the coffee cream.
  7. 7. Separate the eggs.
  8. 8. Whisk the egg yolks with sugar until frothy.
  9. 9. Slowly pour the hot coffee cream in while stirring constantly.
  10. 10. Place the bowl over a hot water bath.
  11. 11. Whisk the mixture for about 7 minutes.
  12. 12. Remove the bowl from the water bath when the mixture thickens slightly.
  13. 13. Let the cream cool down.
  14. 14. Stir the cream occasionally while it cools.
  15. 15. Wash the nectarine thoroughly.
  16. 16. Remove the pit of the nectarine.
  17. 17. Dice the fruit flesh into small pieces.
  18. 18. Fold the nectarine cubes into the ice cream base.
  19. 19. Put the mixture into a shallow dish.
  20. 20. Freeze the dish for at least 4 hours.
  21. 21. Stir the mixture regularly with a fork.
  22. 22. Break up the ice crystals while stirring.
