🥤 Coffee Ice Cream with Nectarine

Ingredients
- Milk 100 ml
- Whipping cream 200 g
- Coffee 25 g
- Eggs 2 pcs
- Sugar 100 g
- Nectarine 1 pc
Instructions
- 1. Put milk and cream into a pot.
- 2. Heat the milk and cream mixture.
- 3. Add the coffee.
- 4. Let the mixture steep covered for 15 to 20 minutes.
- 5. Strain the coffee cream through a sieve.
- 6. Reheat the coffee cream.
- 7. Separate the eggs.
- 8. Whisk the egg yolks with sugar until frothy.
- 9. Slowly pour the hot coffee cream in while stirring constantly.
- 10. Place the bowl over a hot water bath.
- 11. Whisk the mixture for about 7 minutes.
- 12. Remove the bowl from the water bath when the mixture thickens slightly.
- 13. Let the cream cool down.
- 14. Stir the cream occasionally while it cools.
- 15. Wash the nectarine thoroughly.
- 16. Remove the pit of the nectarine.
- 17. Dice the fruit flesh into small pieces.
- 18. Fold the nectarine cubes into the ice cream base.
- 19. Put the mixture into a shallow dish.
- 20. Freeze the dish for at least 4 hours.
- 21. Stir the mixture regularly with a fork.
- 22. Break up the ice crystals while stirring.
- 23. Shape the ice cream into balls.
- 24. Serve the ice cream.
