🍰 Mandarin Cheesecake with Crunchy Cookie Base

Ingredients
- butter cookies 200 g
- butter 100 g
- mandarins from the can 300 g
- quark 40 % fat in dry matter 500 g
- mascarpone 500 g
- eggs 4 pcs
- cornstarch 40 g
- baking powder 0.5 packet
- sugar 80 g
- vanilla sugar 1 packet
- salt pinch
Instructions
- 1. Preheat the oven to 175 degrees Celsius. Set the oven to top and bottom heat.
- 2. Place the cookies into a food processor or blender.
- 3. Crush the cookies for 8 seconds on high speed.
- 4. Pour the cookie crumbs into a separate bowl.
- 5. Place the butter into the empty mixing bowl.
- 6. Melt the butter for 2 minutes at 90 degrees Celsius on low speed.
- 7. Mix the melted butter thoroughly with the cookie crumbs.
- 8. Grease a springform pan with a little fat.
- 9. Press the cookie mixture firmly into the bottom of the pan to form a base.
- 10. Drain the mandarin oranges well in a sieve.
- 11. Add quark, mascarpone, eggs, cornstarch, baking powder, sugar, vanilla sugar, and a pinch of salt to the mixing bowl.
- 12. Blend the filling ingredients for 30 seconds on speed 4.
- 13. Add the drained mandarins to the mixture.
- 14. Mix the mandarins in for 10 seconds on low speed in reverse direction.
- 15. Pour the cheesecake mixture into the prepared pan.
- 16. Bake the cake in the oven for about 50 minutes.
- 17. Let the cake cool down for 1 hour inside the turned-off oven.
- 18. Remove the cake from the oven and let it cool completely.
- 19. Cut the cake into slices and serve.
