  1. 1. Preheat the oven to 160 degrees Celsius with fan.
  2. 2. Melt the butter in a pot over medium heat.
  3. 3. Crush the biscuits into small pieces inside a freezer bag.
  4. 4. Mix the biscuit crumbs with the melted butter.
  5. 5. Lightly grease six ovenproof jars.
  6. 6. Distribute the butter-biscuit mixture evenly among the jars.
  7. 7. Press the layer down firmly.
  8. 8. Rinse the lemon thoroughly with hot water.
  9. 9. Grate about one teaspoon of the lemon zest finely.
  10. 10. In a bowl, mix the cream cheese, eggs, sour cream, sugar, and lemon zest well.
  11. 11. Distribute the cheese filling evenly among the prepared jars.
  12. 12. Place the jars in a baking dish.
  13. 13. Pour about four centimeters of hot water into the baking dish.
  14. 14. Bake the jars in the oven for about 40 minutes.
  15. 15. Remove the jars from the oven when the cream is slightly firm.
  16. 16. Let the cheesecakes in the jars cool down completely.
  17. 17. Serve them with fresh fruit if desired.
