🍽️ Crispy Fried Potatoes with Cheese Sausage and Sauerkraut

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- onions, yellow 2 pcs.
- chives, fresh 10 g
- oil 4 tbsp
- sauerkraut 800 g
- bay leaves, dried 1 pc.
- vegetable broth 200 ml
- pepper, black ground pinch
- Bohemian sausages with cheese 4 pcs.
- mustard 4 tbsp
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Place the potatoes in a pot and cover them with salted water.
- 3. Bring the water to a boil and cook the potatoes for about 20 minutes over medium heat.
- 4. Drain the cooking water and rinse the potatoes briefly with cold water to let them cool down.
- 5. Peel the cooled potatoes.
- 6. Slice the potatoes into pieces about 0.5 cm thick.
- 7. Halve the onions and remove the outer skin.
- 8. Dice the onions finely.
- 9. Wash the chives and pat them dry.
- 10. Cut the chives into small rings.
- 11. Heat 1 tablespoon of oil in a pot over high heat.
- 12. Sauté half of the diced onions for about 2 minutes.
- 13. Add the sauerkraut and the bay leaf to the pot.
- 14. Pour in the vegetable broth.
- 15. Simmer the sauerkraut covered for about 20 minutes over medium heat.
- 16. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 17. Fry the potato slices for about 15 minutes until golden brown and crispy.
- 18. Add the remaining onions to the pan.
- 19. Fry the onions for another 5 minutes.
- 20. Season the fried potatoes with salt and pepper.
- 21. Heat 1 tablespoon of oil in a separate frying pan over high heat.
- 22. Fry the cheese sausage for about 5 minutes on all sides.
- 23. Season the cooked sauerkraut finally with salt and pepper.
- 24. Plate the sauerkraut, fried potatoes, and sausage.
- 25. Serve the dish with some mustard.
- 26. Garnish the food with the prepared chive rings.
