🍲 Cheese Leek Soup with Minced Meat

Ingredients
- Leek 2 pcs.
- Onions, yellow 1 pc.
- Lemons 1 pc.
- Oil 2 tbsp.
- Minced meat, mixed 500 g
- Whipping cream 200 ml
- Processed cheese 200 g
- Vegetable broth 700 ml
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Cut the leek in half lengthwise, remove the roots, chop into large pieces and wash thoroughly. Halve and peel the onion. Rinse the lemon with hot water, zest about 1 tsp, cut in half, and squeeze out the juice.
- 2. Place the onion and leek into the mixing bowl. Chop the vegetables for 10 seconds on speed 8. Then transfer to another container. Add oil and minced meat to the mixing bowl and sauté for 5 minutes on the sautéing setting. Add the leek, cream, processed cheese, lemon zest, and vegetable broth, and cook for 15 minutes at speed 1/100 °C without the measuring cup.
- 3. Season the cheese leek soup with salt, pepper, and lemon juice, and serve on plates.
