  1. 1. Turn on the oven to 200 degrees Celsius (convection mode) and let it preheat.
  2. 2. Cut off the hard rind from the mountain cheese.
  3. 3. Grate the remaining cheese finely.
  4. 4. Take a large bowl and add flour, honey, salt, caraway seeds, and oil.
  5. 5. Add half of the grated cheese to the mixture in the bowl.
  6. 6. Mix the ingredients well together.
  7. 7. Add water gradually.
  8. 8. Knead the dough until it is smooth and uniform.
  9. 9. Lightly dust a work surface with flour.
  10. 10. Roll out the dough on the surface to a thickness of about 3 millimeters.
  11. 11. Cut the dough into rectangles using a fluted pastry wheel.
  12. 12. Line two baking trays with baking paper.
  13. 13. Place the dough pieces on the trays with some space between them.
  14. 14. Prick the crackers several times with a fork.
  15. 15. Sprinkle the crackers with salt.
  16. 16. Add the remaining grated cheese on top.
  17. 17. Put the trays into the preheated oven one after the other.
  18. 18. Bake the crackers for about 12 to 15 minutes.
  19. 19. Take the trays out when the crackers are golden brown.
  20. 20. Let the crackers cool completely on a wire rack.
