🥗 Cheese Meatballs with Mashed Potatoes, Fried Onions, and Tomato-Cucumber Salad

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- Gouda, young block 100 g
- cucumbers 1 pc.
- vine tomatoes 2 pc.
- parsley, fresh 25 g
- organic limes 0.5 pc.
- pork mince 600 g
- pepper, black ground pinch
- eggs 1 pc.
- oil 4 tbsp
- sugar 2 tbsp
- butter 1 tbsp
- milk 200 ml
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan setting.
- 2. Wash the potatoes and peel them.
- 3. Cut the potatoes into large cubes.
- 4. Place the potato cubes into a pot.
- 5. Cover the potatoes with salted water.
- 6. Bring the water to a boil.
- 7. Cook the potatoes covered for about 25 minutes.
- 8. Peel the onion.
- 9. Halve the onion.
- 10. Slice the onion into rings.
- 11. Grate the Gouda cheese finely.
- 12. Wash the cucumber and the tomatoes.
- 13. Dry the vegetables.
- 14. Cut the tomatoes and cucumber into pieces about 2 cm in size.
- 15. Wash the parsley.
- 16. Shake the parsley dry.
- 17. Pluck the parsley leaves from the stems.
- 18. Chop the parsley leaves roughly.
- 19. Wash the lime.
- 20. Cut the lime in half.
- 21. Squeeze the juice from the lime.
- 22. Take a large bowl.
- 23. Add the ground meat to the bowl.
- 24. Add salt and pepper.
- 25. Add the egg.
- 26. Add the grated Gouda.
- 27. Mix all ingredients well.
- 28. Shape the meat mixture into meatballs.
- 29. Make sure each meatball weighs about 80 grams.
- 30. Heat a frying pan.
- 31. Add 1 tablespoon of oil to the pan.
- 32. Set the heat to medium.
- 33. Fry the meatballs in the pan.
- 34. Fry them for about 3 minutes on all sides.
- 35. Place the meatballs on a baking sheet.
- 36. Place the baking sheet in the oven.
- 37. Finish cooking the meatballs for about 12 minutes.
- 38. Add the onion rings to the pan.
- 39. Fry the onions in the cooking fat.
- 40. Fry them for about 10 minutes until golden brown.
- 41. Stir the onions occasionally.
- 42. Take a small bowl for the dressing.
- 43. Add the lime juice to the bowl.
- 44. Add 2 tablespoons of oil.
- 45. Add 2 tablespoons of sugar.
- 46. Add 4 tablespoons of water.
- 47. Whisk the dressing ingredients.
- 48. Take a bowl for the salad.
- 49. Add the tomato pieces to the bowl.
- 50. Add the cucumber pieces to the bowl.
- 51. Add half of the chopped parsley.
- 52. Combine the vegetables with the parsley.
- 53. Season the salad with salt and pepper.
- 54. Drain the cooked potatoes.
- 55. Add butter to the mashed potatoes.
- 56. Add milk to the mashed potatoes.
- 57. Mash the potatoes with a hand mixer.
- 58. Mash them until they are creamy.
- 59. Fold in the remaining parsley into the puree.
- 60. Season the puree with salt and pepper.
- 61. Remove the meatballs from the oven.
- 62. Plate the mashed potatoes.
- 63. Place the meatballs next to the mashed potatoes.
- 64. Add the fried onions.
- 65. Serve the tomato-cucumber salad alongside.
