  4. 4. Puree the peach in a tall container until smooth.
  5. 5. Place the peach puree into a bowl.
  6. 6. Add the cream cheese.
  7. 7. Season the mixture with salt and pepper.
  8. 8. Rinse the fish fillets under cold water.
  9. 9. Pat the fillets dry with a kitchen towel.
  10. 10. Cut the filts into eight thin strips, depending on their size.
  11. 11. Place a fish fillet on a slice of ham.
  12. 12. Spread a thin layer of the cream cheese-peach mixture onto the fish.
  13. 13. Roll the ham and fish tightly.
  14. 14. Secure the roll with a skewer.
  15. 15. Oil the grill grate.
  16. 16. Place the skewers on the hot grill.
  17. 17. Grill the skewers for about 10 minutes.
  18. 18. Heat two tablespoons of oil in a pan over medium-high heat.
