🍽️ Crunchy Cod Gratin

Ingredients
- Cod, frozen 600 g
- Butter 6 tbsp
- Wheat flour, Type 405 3 tbsp
- Milk 300 ml
- Whipping cream 150 g
- Mustard 4 tsp
- Salt pinch
- Pepper, black ground pinch
- Lemons 1 pc
- Dill, fresh 20 g
- Breadcrumbs 40 g
Instructions
- 1. Let the cod thaw overnight in the refrigerator.
- 2. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 3. Melt 3 tablespoons of butter in a pot over medium heat.
- 4. Add flour and stir constantly for about 2 minutes until it lightly sweats.
- 5. Deglaze the mixture with milk and stir vigorously.
- 6. Stir cream into the sauce.
- 7. Season the sauce with mustard, salt, and pepper.
- 8. Let the sauce simmer for about 5 minutes while stirring constantly until it thickens.
- 9. Rinse the cod and pat it dry with kitchen paper.
- 10. Cut the fish into smaller pieces if necessary.
- 11. Wash the lemon.
- 12. Grate about 1 teaspoon of lemon zest finely.
- 13. Halve the lemon and squeeze out the juice.
- 14. Rinse the dill and dry it well.
- 15. Pluck the dill tips and chop them finely.
- 16. Mix breadcrumbs with the chopped dill and lemon zest in a bowl.
- 17. Pour half of the sauce into a baking dish.
- 18. Place the fish pieces evenly on top of the sauce.
- 19. Season the fish with salt, pepper, and a splash of lemon juice.
- 20. Pour the remaining sauce evenly over the fish.
- 21. Sprinkle the breadcrumb mixture over the gratin.
- 22. Distribute the remaining butter in small pieces on the surface.
- 23. Bake the gratin in the preheated oven for about 25 to 30 minutes.
- 24. Carefully remove the dish from the oven and serve immediately.
