  1. 1. Let the cod thaw overnight in the refrigerator.
  2. 2. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  3. 3. Melt 3 tablespoons of butter in a pot over medium heat.
  4. 4. Add flour and stir constantly for about 2 minutes until it lightly sweats.
  5. 5. Deglaze the mixture with milk and stir vigorously.
  6. 6. Stir cream into the sauce.
  7. 7. Season the sauce with mustard, salt, and pepper.
  8. 8. Let the sauce simmer for about 5 minutes while stirring constantly until it thickens.
  9. 9. Rinse the cod and pat it dry with kitchen paper.
  10. 10. Cut the fish into smaller pieces if necessary.
  11. 11. Wash the lemon.
  12. 12. Grate about 1 teaspoon of lemon zest finely.
  13. 13. Halve the lemon and squeeze out the juice.
  14. 14. Rinse the dill and dry it well.
  15. 15. Pluck the dill tips and chop them finely.
  16. 16. Mix breadcrumbs with the chopped dill and lemon zest in a bowl.
  17. 17. Pour half of the sauce into a baking dish.
  18. 18. Place the fish pieces evenly on top of the sauce.
  19. 19. Season the fish with salt, pepper, and a splash of lemon juice.
  20. 20. Pour the remaining sauce evenly over the fish.
  21. 21. Sprinkle the breadcrumb mixture over the gratin.
  22. 22. Distribute the remaining butter in small pieces on the surface.
  23. 23. Bake the gratin in the preheated oven for about 25 to 30 minutes.
  24. 24. Carefully remove the dish from the oven and serve immediately.
