🍲 Mediterranean Cod and Shrimp Stew with Rice

Ingredients
- Cod, frozen 600 g
- Zucchini 2 pcs
- Pepper, red 1 pc
- Onions, red 1 pc
- Garlic cloves 1 pc
- Long-grain rice 300 g
- Salt pinch
- Oil 3 tbsp
- White wine, dry 100 ml
- Tomatoes, chopped 800 g
- Pepper, black ground pinch
- Sugar pinch
- Thyme, dried pinch
- Party Shrimp 200 g
Instructions
- 1. Ideally, thaw the cod overnight in the refrigerator.
- 2. Wash the zucchini thoroughly and cut off the ends.
- 3. Cut the zucchini into large cubes.
- 4. Wash the bell pepper and cut it into quarters.
- 5. Remove the stem and seeds from the bell pepper.
- 6. Cut the deseeded bell pepper into large cubes as well.
- 7. Halve the onion and remove the outer skin.
- 8. Slice the peeled onion into rings.
- 9. Peel the garlic and chop it finely.
- 10. Place the rice in a pot and cover it with 700 milliliters of salted water.
- 11. Bring the water with the rice to a boil.
- 12. Let the rice cook for about 15 minutes.
- 13. Heat oil in a second pot over high heat.
- 14. Sauté the onion rings together with the chopped garlic for about 1 minute.
- 15. Add the zucchini and bell pepper cubes to the pot.
- 16. Fry the vegetables for another 4 minutes.
- 17. Deglaze the pan with white wine.
- 18. Add the chopped tomatoes to the mixture.
- 19. Season the vegetables with salt, pepper, sugar, and thyme.
- 20. Let the vegetables simmer covered for about 15 minutes.
- 21. Rinse the thawed cod and shrimp under running water.
- 22. Pat the fish and shrimp pieces dry with a kitchen towel.
- 23. Cut the cod into bite-sized cubes.
- 24. Add the cod and shrimp to the pot after about 10 minutes of cooking time.
- 25. Let everything cook together until done.
- 26. Adjust the seasoning of the sauce if necessary.
- 27. Serve the cod and shrimp with the vegetables on top of the rice.
