🍽️ Cod with Tomato-Pepper Vegetables

Ingredients
- Cod, frozen 600 g
- Vine tomatoes 500 g
- Pepper, red 2 pcs.
- Spring onions 1 bunch
- Organic limes 1 pc.
- Salt pinch
- Pepper, black ground pinch
- Oil 2 tbsp
- Chili, ground pinch
Instructions
- 1. Thaw the cod preferably overnight in the refrigerator.
- 2. Wash the tomatoes and cut them into wedges.
- 3. Wash the peppers, halve them, remove the stems and seeds, and cut into strips.
- 4. Wash the spring onions, trim the roots, and slice them into rings.
- 5. Wash the lime, halve it, and squeeze out the juice.
- 6. Rinse the cod and pat it dry with a paper towel.
- 7. Season the fish with salt, pepper, and lime juice.
- 8. Heat oil in a pan over medium heat.
- 9. Sauté the tomatoes with the peppers for about 3 minutes.
- 10. Add the spring onions and season with salt, pepper, and chili.
- 11. Place the fish on the vegetables and cover the pan.
- 12. Cook the fish for about 7 minutes.
- 13. Plate the cod with the vegetables and serve.
