  1. 1. Thaw the cod preferably overnight in the refrigerator.
  2. 2. Wash the tomatoes and cut them into wedges.
  3. 3. Wash the peppers, halve them, remove the stems and seeds, and cut into strips.
  4. 4. Wash the spring onions, trim the roots, and slice them into rings.
  5. 5. Wash the lime, halve it, and squeeze out the juice.
  6. 6. Rinse the cod and pat it dry with a paper towel.
  7. 7. Season the fish with salt, pepper, and lime juice.
  8. 8. Heat oil in a pan over medium heat.
  9. 9. Sauté the tomatoes with the peppers for about 3 minutes.
  10. 10. Add the spring onions and season with salt, pepper, and chili.
  11. 11. Place the fish on the vegetables and cover the pan.
  12. 12. Cook the fish for about 7 minutes.
  13. 13. Plate the cod with the vegetables and serve.
