🍽️ Crispy Cod Croquettes with Fresh Chive Aioli

Ingredients
- Organic Lemon 1 pc
- Parsley, fresh 0.25 bunch
- Chives, fresh 0.5 bunch
- Cod back fillet 250 g
- Eggs 1 pc
- Breadcrumbs 70 g
- Salt pinch
- Pepper, black ground pinch
- Sunflower oil 125 ml
- Aioli 100 g
Instructions
- 1. Rinse the lemon under hot water and pat it dry.
- 2. Finely grate the yellow zest of the lemon and set aside one-third of it.
- 3. Squeeze the juice from the remaining lemon halves and set it aside.
- 4. Wash the parsley and chives and shake off excess water.
- 5. Cut the chives into fine rings.
- 6. Pluck the parsley leaves from the stems and chop them finely.
- 7. Pat the cod fillet dry with kitchen paper.
- 8. Remove any bones from the fish.
- 9. Cut the cod fillet into small pieces.
- 10. Place the fish, the lemon zest, the parsley, the egg, and half of the chive rings into a blender.
- 11. Blend the ingredients until you have a smooth mixture.
- 12. Transfer the fish mixture into a bowl.
- 13. Stir the breadcrumbs into the mixture.
- 14. Season the mixture with salt and pepper to taste.
- 15. Take two tablespoons of the mixture at a time and shape them into small croquettes.
- 16. Heat the oil in a large frying pan.
- 17. Fry the croquettes on all sides until golden brown over medium heat.
- 18. Let the finished croquettes drain on kitchen paper.
- 19. Cut the lemon halves into wedges.
- 20. Serve the croquettes with the aioli and the lemon wedges.
- 21. Sprinkle the remaining chive rings over the croquettes.
