  1. 1. Thaw the cod overnight in the refrigerator.
  2. 2. Pat the fish dry with kitchen paper the next day.
  3. 3. Place the cod in a bowl.
  4. 4. Drizzle the fish with vinegar.
  5. 5. Season the fish with salt.
  6. 6. Cut the cod into three equal pieces.
  7. 7. Let the gherkins drain well.
  8. 8. Cut the gherkins into small cubes.
  9. 9. Halve the onions.
  10. 10. Peel the onion halves.
  11. 11. Finely chop the onions.
  12. 12. Heat a frying pan over medium heat.
  13. 13. Fry the bacon in the pan for about 5 minutes without adding extra fat.
  14. 14. Wash the rosemary under running water.
  15. 15. Shake the rosemary dry.
  16. 16. Strip the rosemary needles from the stems.
  17. 17. Finely chop the rosemary needles.
  18. 18. Place a piece of aluminum foil on a work surface.
  19. 19. Place a piece of cod on the foil.
  20. 20. Add a few cubes of gherkin to the fish.
  21. 21. Add some bacon to the fish.
  22. 22. Sprinkle some chopped rosemary over the fish.
  23. 23. Place the next piece of cod on top.
  24. 24. Repeat the layers until all the fish is used.
  25. 25. Add the remaining bacon over the fish.
  26. 26. Add the chopped onions over the fish.
  27. 27. Add the remaining gherkins over the fish.
  28. 28. Fold the foil into a closed packet.
  29. 29. Grill the packet over high heat for about 40 minutes.
  30. 30. Alternatively, you can cook the packet in the oven at 160 degrees Celsius (top and bottom heat) for about 40 minutes.
